We tend to get into a routine where we eat the same meals each week. One of the wonderful things about creating recipes for you (my readers), and trying new products, is that it helps us switch up our dinner menu. This Gluten-Free, Dairy-Free Pasta Fagioli soup is super simple to make, and feeds a crowd.
Our friends invite us to Mt. Hood every Presidents Day to ski, sled, and have some fun. We split up the meal making so cooking for all of us is easier. I made a quick pot of Past Fagioli Soup. It was enough to feed all eight of us, and we had enough for lunch the next day. When you come in from the snow, hungry from all the fun, soup is the way to go.
Have you heard of Vivian’s Live Again? I just recently partnered with them. My family loves their gluten-free, dairy-free products. I used the Tomato and Hearb Soup Mix in my Gluten-Free Pasta Fagiolio. I didn’t have to bring a ton of spices, and canned tomatoes with us on our trip. Only some fresh veggies, ground beef, and this soup mix.
The soup mix was thick and creamy, even though it’s dairy-free. It had exactly the amount of spices that I would have included in pasta fagioli, and all I needed to do was mix it with water.
If you want to half, or double the recipe, it’s easy enough to do. I haven’t tried freezing the soup and defrosting it yet, but the next time I make it I will freeze half the batch in individual containers for lunches.
