It’s back to school time and we are stocking our pantry with lunchbox friendly foods. This year we’re switching things up and rotating snack so the kids don’t get tired of having the same thing. Enjoy Life Foods just came out with three new Baked Chewy Bars (clicking on this link gets you 20% off single boxes, if you’re interested) and my kids are excited.
The new Enjoy Life Foods Baked Chewy Bars come in three incredible flavors: lemon blueberry poppy seed, caramel blondie, and carrot cake. I tried each flavor before sharing them with my kids. All three of us had a hard time choosing a favorite.

One of the many things I like about these bars is that they’re not too sweet. Often with chewy granola bars you find that they are super sweet and leave a sticky feeling in your mouth – not these.
My girls and I loved them so much we starting throwing ideas out on how else we might enjoy these granola bars. Similar to granola, these chewy bars have a pleasing texture. While they are not crunchy (they’re chewy), they are delicious on their own and they add a wonderful depth to other foods. I am not a fan on eating my dairy-free yogurt plain, and I don’t typically reach for fruity yogurt. I cut up a carrot cake chewy bar and made a yogurt parfait with it. It was amazing.
You might be wondering why I have a picture of a salad in this post. I cut up the lemon blueberry poppy seed bar and put it on top. This salad has lettuce, spinach, chicken, tomatoes, and blueberries. Chop up a lemon blueberry poppy seed bar and sprinkle it on top for some added texture and flavor. It’ll surprise you.
How about an ice cream sundae? We dished up some dairy-free chocolate ice cream, topped it with dairy-free whipped cream, chocolate sauce and cut up pieces of the caramel blondie baked chewy bar. OH… MY.. WORD! It was one of the best sundaes I’ve had. I don’t think I’ll ever eat ice cream plain again.
