Spring is in full swing here, and what better way to celebrate spring, then with fresh baked goods. These irresistibly chewy Gluten-Free Carrot Cake Sandwich Cookies are one of my favorite all time recipes. The delectable cream filling smashed between two cookies is absolutely criminal.
When my husband test-tasted these cookie sandwiches, he couldn’t believe they were gluten-free and dairy-free. This recipe makes approximately 12 carrot cake sandwich cookies, which is just enough to share with your family and friends.
You don’t have to share, but you’ll win over many hearts by sharing the love, and these cookies.
One of the many things I love about these Gluten-Free Carrot Cake Sandwich Cookies is that they are packed with healthy fats and loads of shredded carrots. They taste amazing and they provide some extra vitamins and protein with the addition of healthy oils and almond flour.
If you don’t have a huge sweet tooth like me, you could fill the centers of these tasty cookies with fresh whipped cream, or coconut whipped cream. You could also eat them plain with no filling, but that wouldn’t be any fun (just kidding).
I’ve made these Gluten-Free Carrot Cake Sandwich Cookies for Easter, Mothers Day, and for birthday parties. They’re such a fun treat to serve up during parties and they also make a great food-gift.
I’ve also been known to wrap a batch of these cookies in tissue paper and a tin and deliver them to someone to brighten their day.
I store these cookies in the refrigerator, but they also last a few days at room temperature. I’ve also frozen batches of the baked cookies and defrosted them before adding frosting and marrying the two cookie together.
My girls don’t know that they are eating a healthy treat when they sneak away with one of these delicious sandwich cookies. And I don’t want to ruin it for them. Every once in a while I let them take on in their lunch, so they have something special to enjoy.
