My girls go through Popsicle’s likes there’s no tomorrow. They’ll eat a couple a day if I let them. I don’t like them eating tons of sweets, so I make our Popsicle’s at home.
That way I can control what goes into them, including how much sugar (if any) to add.
We’re big fruit lovers in our family and try to eat fruits in season. Recently we’ve been given a bunch of tart cherries.
Most of the time I make tarts, pies, or cobblers with cherries but this summer I wanted to try something different. My girls love lemonade so Cherry Lemonade Icepops it is!
We make our own Icepops using fruit juices, or fresh fruit. This time I did something a little different.
Because the cherries were tart, I couldn’t use them as-is in the recipe because they wouldn’t be sweet and wouldn’t go over very well with my girls.
I cooked them on the stove top with some honey to help sweeten them up a bit before putting them through the food processor.
The honey provided the right amount of sweetness and helped the flavors pop right out of the Icepops.
Cooking the cherries on the stove helped pull the lovely red color from the skin, giving them a vibrant cherry look.
