We love taking these gluten-free Seed & Fruit No-Bake Energy Bars with us when we travel! They are super easy to make and they are healthy to boot!
The summer season is coming up fast and with summer comes an increase in road trips, traveling, camping, summer camps, and pool activities. I like to plan in advance and start thinking about healthy snacks to rotate into my family’s coolers and lunch boxes so we are prepared. We usually stick with snacks that are gluten-free, dairy-free, and peanut-free (I have one gluten/dairy free girl, and one gluten/peanut free girl). I don’t know about you, but we’ve eaten our way through just about every gluten-free, dairy-free, peanut-free snack on the shelves. Although those snacks are delicious, my family likes to switch things up frequently.
While on the hunt for new and exciting snacks to consume during our summer shenanigans, I came across two Seed & Fruit mixes from Enjoy Life Foods – Beach Bash® & Mountain Mombo®. I already knew that my family loved Enjoy Life Foods products (we eat their Plentils® and chocolate chips by the pounds – and yes, sometimes together) and I knew any product produced by Enjoy Life Foods was safe for everyone in my family to enjoy.
As soon as we tried the Seed & Fruit mixes we developed an instant snack-crush. It’s rare that we find one thing that works for everyone in the family, especially one thing that we can all enjoy. What I like about the Seed & Fruit mixes is that you can enjoy them as-is or use them in other recipes for things like breakfast cookies, trifles, topping for crisps, and even energy bars.

My girls have really been enjoying the Cocoa Loco bars the past few weeks so my first thought was, How can I make a healthy energy bar with one or both of these seed & fruit mixes? I decided to develop a recipe that would work with both mixes and I was determined to make it simple and quick. I wanted the bars to be “no-bake” to limit the number of times I need to turn on the oven during the warm summer months. I also wanted to ensure that the recipe I created used as few ingredients as possible and didn’t include any of the top eight allergens.
The first few recipes I developed yielded delicious bars, but they didn’t hold together very well. No worries though, my family still used the bars to make our own homemade grain-free granola. That’s the beauty about making granola bars or energy bars, if they don’t work out there are tons of other things you can do with them so you don’t waste your ingredients (i.e. granola, ice cream toppings, etc.).
After a few rounds of taste testing I finalized the recipe for the these energy bars. These bars fit all of my requirements of being simple to make, no-bake, and they hold up nicely in lunch boxes. They are still free of all the allergens listed above and they taste delicious.
