Fall in love with gingerbread all over again with these Gluten-Free Ginger Softies. These soft, chewy, cookies will not only make your house smell amazing, they will be a new favorite in your cookie jar.
A few days ago at a grocery store, I sampled a soft and slightly chewy gluten-free snickerdoodle. The cookie was nicely done and the texture sat with me (in a good way). I really enjoyed the cookie. When I turned the box over I noticed it had about 20 ingredients in it, including a lot of preservatives. I am not a big fan of eating processed foods with more preservatives than main ingredients.
Really interested in seeing if I could replicate the texture, I started developing this recipe. After a few attempts I achieved successful results. These cookies are slightly sweet, have just the right combination of spices (but not too spicy), are simple to make – without the preservatives.
