How to make gluten-free baked chicken
Preheat oven to 425°F (218°C). Lightly grease a 9"X9"X2" baking pan; set aside.
In a medium mixing bowl, mix gluten-free bread crumbs, Parmesan, oregano, garlic salt, and pepper; set aside.
Coat each piece of chicken with Dijon mustard. (I place the Dijon in a container or a plastic bag with the chicken and shake it until it's coated.)
Dip Dijon-coated chicken in bread crumb mixture until all sides are covered. Place in the pan.
Bake chicken for 25-30 minutes or until done and juice runs clear.
If you are not a fan of oregano, you can leave it out of this gluten-free baked oregano and have gluten-free baked chicken.
Also, if Dijon is too strong for you, you can dip the chicken in whisked egg to help the crumb coating stick.
The oregano and mustard flavors combine to make the chicken tangy and flavorful, and the bread crumb-Parmesan combo will provide the perfect bite.
Plus this chicken is baked, not fried, which makes it healthier than a lot of other gluten-free chicken recipes.
How to I make this gluten-free chicken grain-free
Not everyone can eat grains. To make this gluten-free chicken grain-free simply swap the bread crumbs out and add in the equivalent amount of almond meal/flour.
It won't be as crunchy, but it'll be just as flavorful.
Is Chicken Gluten-Free
Chicken, like all meat, is naturally gluten-free. Sometimes when chicken is processed fillers are injected into the meat. Always check packaging to make sure no gluten ingredients were added during the processing of the chicken.
How long do you bake Chicken?
You can bake small chicken breasts in the oven at 425°F for 20 minutes, until the chicken is heated through to 165°F. For thicker chicken breasts, add more time.
I recommend investing in a meat thermometer to test the internal temperature to see if it's done.

- 4 boneless, skinless chicken breasts (about 1 ½ lbs)
- ¼ cup dry gluten-free bread crumbs (Can use almond meal or cornmeal)
- 3 tablespoons grated Parmesan cheese
- ¼ teaspoon dried oregano leaves
- ⅛ teaspoon garlic salt
- ⅛ teaspoon pepper
- ¼ cup Dijon mustard
Instructions

i know somebody just asked this but... what would i use to replace the dijon mustard because i would rather not use mustard in it at all also i can not eat eggs allergy.
