Yummy, gluten-free blueberry banana bread. This bread is moist and cake like. Serve it for breakfast, snack or as a dessert. Either way, It’s nutritious and inviting.
I end up with one or two overripe bananas almost weekly. If I buy less bananas, I run out, If I buy more bananas we have left overs. Sometimes I wonder if my girls are tricking me with some evil banana supply and demand game. I got tired of wasting bananas and started developing recipes with I have overripe bananas sitting on my counter.
I developed this recipe in early July when I had an abundance of blueberries from my garden. We have six blueberry plants. Just enough to eat and freeze (for smoothies). My girls don’t eat a lot of baked goods with blueberries, and because its them that I am usually baking for (or you) I don’t make a lot of blueberry baked goods.
This bread is one of those exceptions. It has just the right amount of tart, fresh blueberries, that it’s not overwhelming in flavor. This Gluten-Free Blueberry Banana bread is one of the few blueberry baked goods my girls will eat.
I like to bake this Gluten-Free Blueberry Banana Bread into smaller loafs. For some reason smaller loafs of bread are more interesting to kids. You can wrap up these wonderful little loafs and gift them to neighbors, family, and friends. They make a great addition to picnics, graduations, and mothers day tea. If you are not interested in sharing, you can freeze the extra loaves for another day.
