The big game is coming up! Yes, the Super Bowl. While I am not a huge fan of football, I do watch it and I love watching the Superbowl. They have gotten a little carried away with the commercials the last few years, but they are still fun and they are apart of the experience.
This year we are making some fun new snacks to munch on while we watch, including these Gluten-Free Carolina Chicken Sliders. These gluten-free sliders are one of our favorite things to serve during parties.
I’ll be honest with you, I only named this recipe “Carolina Chicken Sliders” because most recipes that are from that area of the US have a vinegary taste to them and most of them have “Carolina” in the recipe title ;-). Vinegar’s a flavor that I love and I will be happy to consume anything made with it.

Usually during the Superbowl we munch on chips and guacamole and nuts, and snacky foods like that.
This year I wanted to make something that still worked well with foods that people might eat during a football game, but I also wanted something that could be considered a meal and not just a snack. These Gluten-Free Carolina Chicken Sliders are delicious and filling.
Throw the ingredients for the chicken and sauce into your slow cooker and enjoy the rest of your day. When it’s cooked and pull-apart tender all you need to do is chop some lettuce, mix the mayo, and toast the buns. There’s almost no prep work needed and no big mess to clean up.
How to Make Gluten-Free Chicken Sliders
- Place chicken, balsamic vinegar, Dijon, and tomato sauce in a crock pot. Cook on low for 4-5 hours or until the chicken shreds easily with a fork.
- Once the chicken is fully cooked and tender, drain the liquid and shred with a fork.
- In a small mixing bowl, mix mayonnaise and sriracha.
- Spread sriracha on one side of the toasted ciabatta and spoon a large helping of chicken on the other side.
- Top the chicken with shredded lettuce and sandwich the two sides together. Repeat until all ciabatta rolls are used.
- Serve warm.
These gluten-free sliders make the best gluten-free party food! I haven’t made the chicken in the instant pot yet but when I do I will come back and update this post.
I’m planning on serving these sliders with chips, a veggie tray (we’ve got to sneak in those veggies), sodas, gluten-free beer, trail mix, and some finger food desserts. I’m also going to keep big pieces of lettuce on hand in case anyone wants to make a wrap out of the chicken instead of devouring it slider-style.
