So, what I love the most about this recipe is the ease of making it. You can use whatever leftover chicken you have on hand or pop into your local store and buy a ready-made rotisserie chicken.
I also like the fact that most veggies can be added into this gf chicken casserole. I have used frozen mixed veggies as I always have a bag on hand, but nothing stops you from adding whatever you have in the freezer or if you have any fresh veggies.

Yogurt - Greek yogurt this is used in place of the traditional canned cream of mushroom soup.
Cheese - Freshly grated or store-bought shredded cheese mix (cheddar) and light or regular cream cheese.
Garlic - I've used garlic puree. Add more depending on how much you love garlic.
Breadcrumbs - I've made my gluten-free breadcrumbs recipe. You can use any stale bread or buy ready-made.
Vegetables - I use 1 cup of frozen vegetable mix. You can, however, use any veggies you like.
Seasoning - For additional flavor, add dried thyme, salt, and paprika. Top it off with chopped parsley.

Casserole dish - I have used a 9x13-inch baking dish.

HOW TO MAKE GLUTEN-FREE CHICKEN CASSEROLE
- Preheat the oven to 360 F. Place chopped boiled chicken in a deep bowl and add cream cheese, frozen mixed vegetables, and garlic puree.
- Add grated cheese, salt, spices, thyme, and Greek yogurt to the same bowl.
- Mix everything thoroughly to get a homogeneous mix of chicken and vegetables.
- Transfer the mix to a baking dish, level it.

You can store your cooled casserole in the refrigerator for up to 3 days. I like to cover it with plastic wrap. You can reheat it in the microwave.

Yes, you can. Let it cool and then make sure to either cut it in portions and freeze them in an airtight container. Alternatively, freeze it in the casserole dish. Make sure the casserole is sealed to protect it from freezer burn with plastic wrap. You can freeze it for up to 3 months.

Do you mix the chicken broth in with everything too? I see it says you need 1/2 cup but there are no other directions on when to add it. I'm going to make this so I will just mix it all.
