An easy recipe for gluten-free chicken noodle soup that uses everyday ingredients. This gluten-free chicken noodle soup recipe is ready in under 30 minutes, uses fresh and simple ingredients, and I've included instructions for a grain-free paleo version.
You can make this recipe using leftover chicken, so it can be made in less than 3o minutes on those busy weeknights or when you need comforting chicken soup when you're not feeling well.

GLUTEN-FREE CHICKEN NOODLE SOUP RECIPE
Chicken noodle soup was the first from-scratch thing I made after I moved out of my parents' house. I found the recipe in the local newspaper and followed it step-by-step. I've modified it over the years to fit what I like and eventually ended up making it gluten-free.
An added bonus is that this gluten-free chicken noodle soup is also naturally dairy free.

Quick to make - You can have dinner done in just under 30 minutes and it is even quicker if you use leftover chicken.
Comfort food - Who doesn't love snuggling up to a warm bowl of delicious gluten-free chicken noodle soup. This works well especially when you are feeling ill.
Pantry staples - The recipe has simple ingredients you most probably have on hand.
INGREDIENTS IN GLUTEN-FREE CHICKEN NOODLE SOUP
Pasta - You can use any uncooked gluten-free pasta like fusilli, penne, or elbows all work. You can also use gluten-free egg noodles.
Onion - For added flavor.
Vegetables - Use large carrots and celery stalks/sticks, cleaned
Oil - I use olive oil but any oil can work, just bear in mind it changes the taste.
Liquid - Use decent quality chicken broth, not chicken stock and add water. If you only have chicken stock, you can use the chicken stock, but the soup will have a thicker liquid.
Chicken - I use chicken breasts but chicken thigh works too.
Seasoning - Salt and pepper to taste. Add in garlic either cloves or pre-minced garlic.
Optional additions - Add some frozen peas as an optional ingredient for some hidden veggies. You can also add 1 teaspoon of oregano, ½ teaspoon sage, and 1 teaspoon of rosemary for a different flavor profile.
EQUIPMENT NEEDED FOR THIS GLUTEN-FREE CHICKEN NOODLE SOUP
Dutch oven - I like to use a Dutch oven as it distributes the heat evenly.

HOW TO MAKE GLUTEN-FREE CHICKEN NOODLE SOUP
- In a large saucepan over medium heat, sauté onions, garlic, carrots, and celery in olive oil until the onion starts to turn translucent.
- Add the chicken broth, water, and cubed chicken breast. TIP: You can use leftover chicken.
- Turn stove to high and bring the soup to a boil. Once you reach a rolling boil, turn the heat back down to medium and continue to cook until the chicken is done.
- Add in the pasta and cook for 10-15 more minutes, or until your pasta is cooked. Watch it carefully as it can overcook easily.
- Add peas (optional) and salt and pepper to taste.
- Continue to cook for 2-3 minutes. Remove from the heat and let it cool before serving.

TIP FOR MAKING THE BEST HOMEMADE GLUTEN-FREE CHICKEN NOODLE SOUP
Vegetables - Don't cut them too thin. They will go all mushy.
Taste the soup - Some chicken broths have added seasoning so taste the soup before adding salt and pepper.
Gluten-free noodles - They tend to absorb the liquid so you may want to add an additional cup of chicken broth. If you prefer noodles al dente, cook them separately and add them in once ready.
CAN I USE COOKED CHICKEN IN THIS CHICKEN SOUP AS A SHORTCUT?
This gluten-free chicken noodle soup recipe uses raw chicken, but you can use cooked chicken. After the noodles are done cooking, add in your cooked chicken and stir. The gluten-free chicken noodle soup will be hot enough to heat the chicken.
CAN I MAKE THIS HOMEMADE CHICKEN NOODLE SOUP AHEAD OF TIME?
Yes, you can. Let it cool and store it in the refrigerator. Add extra chicken broth as the pasta soaks up some of the liquid.
IS CHICKEN NOODLE SOUP GLUTEN-FREE?
Traditionally chicken noodle soup and most store-bought chicken noodle soups aren't gluten-free. The good news is all chicken noodle soup recipes can easily be converted to be gluten-free. Make sure you use gluten-free noodles and broth, and if it calls for flour (this gluten-free chicken noodle soup recipe does not call for flour) use a gluten-free flour blend.
CAN I MAKE THE HOMEMADE CHICKEN NOODLE SOUP IN A SLOW COOKER?
Yes, you can modify this recipe for a slow cooker. Add all ingredients except the gluten-free pasta into the slow cooker. Set it on low heat for 6-8 hours. Once you reach that time add in the gluten-free pasta and cook for an additional 30-40 minutes.
CAN I MAKE THE HOMEMADE CHICKEN NOODLE SOUP IN THE INSTANT POT?
Yes, you can. Use the sauté setting and add all the ingredients onions, garlic, carrots, and celery in olive oil until the onion starts to turn translucent. Add the chicken broth, water, and cubed chicken breast. Close the lid and then set it for 7 minutes, once done let it have a natural release. Add your gluten-free pasta and cook for 8-10 minutes until the pasta is cooked.
CAN I FREEZE GF CHICKEN NOODLE SOUP AND REHEAT IT?
Yes, you can freeze this chicken noodle soup. However, I would omit the gluten-free noodles and only cook them when you are defrosting and serving the soup.
HOW CAN I STORE THIS GLUTEN-FREE SOUP RECIPE?
Allow it to cool. Add the soup to an airtight container and freeze. You may want to store it in portion sizes so you can defrost it easier.
CAN YOU MAKE THIS GLUTEN-FREE CHICKEN NOODLE SOUP PALEO?
Yes, if you want to make a grain-free or low carb chicken noodle soup simply swap the noodles for zoodles. To make this a paleo chicken noodle soup, use zoodles and leave out the peas.
WHAT CAN YOU SERVE WITH GLUTEN-FREE CHICKEN NOODLE SOUP
You can enjoy this soup on its own as it's packed with chicken, noodles, and veggies making it a complete meal. If you want to serve it with something, you'll want to make my gluten-free dinner rolls. My gluten-free cornbread is also a great side.

Gluten-Free Chicken Noodle Soup

Ingredients
- 10 oz. uncooked pasta (fusilli, penne, or elbows all work)
- 1 small onion, chopped
- 2 cloves garlic, minced (you can use 2 tablespoons of pre-minced garlic)
- 4 large carrots, peeled and sliced into ½-inch pieces
- 4 celery stalks/sticks, cleaned and sliced into ½-inch pieces
- 2 tablespoons olive oil
- 3 cups (24 oz) chicken broth
- 3 cups water
- 1 lb. chicken breast, cut into 1-inch cubes (chicken thigh works too)
- 1 cup fresh or frozen peas (optional)
- Salt and pepper to taste
- optional: 1 teaspoon or oregano, ½ teaspoon sage, and 1 teaspoon of rosemary
Instructions
- In a large saucepan over medium heat, sauté onions, garlic, carrots, and celery in olive oil until the onion starts to turn translucent.
- Add the chicken broth, water, and cubed chicken breast.

Notes
- Fusilli, penne, or elbows all work. You can also use your favorite noodles.
- You can always add less pasta, if desired.
- Want stronger flavors? Add 1 teaspoon of oregano, ½ teaspoon sage, and 1 teaspoon of rosemary
- You can use cooked chicken. Add it in at the end before serving.
- You can use 2 tablespoons of pre-minced garlic.
