GLUTEN FREE CHICKEN PARMESAN RECIPE
Chicken Parmesan used to be one of my absolute favorite things to order at an Italian restaurant.
There is something so comforting about a plate of pasta topped with crispy, saucy, cheesy chicken that I just love.
Gluten Free Chicken Parmesan is easy to make yourself, and just as amazing as any restaurant dish.
There are a few steps to this recipe, but follow along, and you'll have a beautiful comfort food dish to serve your family that is filling, delicious, and perfectly homemade.
INGREDIENTS IN GLUTEN FREE CHICKEN PARMESAN
Chicken - Use boneless, skinless chicken breasts for tender chicken cutlets.
Eggs - Eggs are used to stick the breading to the chicken.
All Purpose Gluten Free Flour Blend - I like Bob's Red Mill brand, or my own blend, 1:1 for regular flour.
Garlic Salt- We'll be seasoning our flour to make it flavorful. Garlic salt is the main seasoning here.
Pepper - Also added to the flour to give flavor to the chicken.
Dried Basil - A classic Italian herb, basil gives this dish a homemade feeling.
Gluten Free Breadcrumbs - Use your favorite brand, or learn how I make my own Gluten Free Breadcrumbs.
Parmesan Cheese - We'll add grated parmesan with our breadcrumbs for a savory crust.
Marinara Sauce - Again, use your favorite gluten free brand, or any homemade sauce.
Shredded Mozzarella Cheese - I love how this type of mozzarella melts and get stringy and gooey.
Fresh Mozzarella Cheese - We're giving our chicken parmesan a double cheese topping with two types of mozzarella.
Fresh Parsley - This is optional, but makes for a beautiful green garnish.

HOW TO MAKE GLUTEN FREE CHICKEN PARMESAN
- Flatten your chicken in a plastic zipper bag, using a rolling pin.
- Using a knife, cut the chicken in half through the middle starting from one end of the breast down to the other. This will create four equal size chicken fillets; set aside.
- Create a breading station for the chicken. In one dish combine the flour, garlic salt, pepper, and basil. In a second, whisk together the eggs, and in a third, mix together the breadcrumbs and parmesan cheese. Dredge the chicken through all three dishes to coat.
- Heat oil, and fry each piece of chicken in a pan until golden brown.
- Pour half of the marinara sauce into a baking dish.
- Place cooked chicken on top, followed by remaining marina sauce.
- Sprinkle shredded mozzarella cheese over the dish and top with slices of fresh mozzarella.
- Bake as directed. Remove from the oven and allow to cool before serving.

TIPS FOR PERFECT GLUTEN FREE CHICKEN PARMESAN
It is important make sure that your chicken is well coated. This recipe will give you plenty of flour, eggs, and breadcrumbs to use, so don't feel like you need to be light on any of it.
The goal is to get as much breading to stick the chicken as possible.
Make sure to preheat your oil before putting the chicken in the pan. Also, don't touch the chicken until at least three full minutes have passed.
This will help to keep the chicken from sticking to your pan.

HOW TO REHEAT GLUTEN FREE CHICKEN PARMESAN
Leftovers of this dish can be stored in the refrigerator for 3-4 days. To reheat the dish, place in the oven for 10-12 minutes at 375F, or microwave for 45 seconds followed by 15 second intervals until heated through.
WHAT TO SERVE WITH GLUTEN FREE CHICKEN PARMESAN
This recipe is perfect served with a green salad and some fresh gluten free dinner rolls.

Gluten Free Chicken Parmesan
Gluten free chicken parmesan is a classic Italian dish made with love, and lots of sauce and cheese. Your family will love this gluten free version of a favorite restaurant meal.
Ingredients
- 1-½ - 2 lb boneless skinless chicken breasts
- 2 large eggs
- ½ cup all-purpose gluten free flour blend (I used my blend or Bob’s Red Mill 1-to-1)
- 1 teaspoon garlic salt
- ½ teaspoon pepper
- ½ teaspoon dried basil
- 1 cup gluten free breadcrumbs (link to my breadcrumb recipe)
- ½ cup grated parmesan cheese
- 24oz of marinara sauce
- 8oz of shredded mozzarella cheese
- 8oz ball of fresh mozzarella cheese
- Fresh parsley, optional for garnish
Instructions
- Preheat the oven to 425F degrees and spray a 9x13 baking dish with nonstick cooking spray.
- Flatten your chicken in a plastic ziplock bag, using a rolling pin.
- Using a knife, cut the chicken in half through the middle starting from one end of the breast down to the other. This will create four equal size chicken fillets; set aside.
- In a shallow pan or dish, mix together the flour, garlic salt, pepper and dried basil.
- In a second dish or bowl, whisk together the eggs.
- In a separate mixing bowl, mix the breadcrumbs and parmesan cheese.
- Dredge the chicken in the flour mixture.
- Then dip it in the egg.
- Lastly, coat both sides of the chicken with breadcrumbs and parmesan.
- Heat 1 tablespoon of cooking oil over medium heat. Place each piece of chicken inside the pan and cook for 3-4 minutes on each side or until golden brown. Repeat until all chicken is cooked.
- Pour half of the marinara sauce into the 9x13 baking dish.
- Place cooked chicken on top followed by the remaining marinara sauce.
- Sprinkle shredded mozzarella cheese over the dish and top with slices of fresh mozzarella.
- Bake uncovered for 15 minutes. Remove from the oven and allow to cool before serving.
Notes
- Be sure to coat each piece of chicken heavily in all three stages of breading; flour, egg and breadcrumbs. You will have leftovers in each stage but should try to use as many ingredients that will stay on your chicken as possible.
- Be sure that your cooking oil is heated before placing your chicken inside the pan. You should not touch the chicken breast until 3 minutes after placing it inside the pan. Both of these things will keep the breading from falling off or sticking to the pan.
- Garnish with fresh, chopped parsley.
- To reheat the dish, place in the oven on 375 for 10-12 minutes or in the microwave for 45 seconds followed by 15 second intervals until done.
- Leftover gluten free chicken parmesan can be stored inside your refrigerator for 3-4 days.
