Hello again! I tried quadrupling the recipe to make 4 mug rolls, but I decided to make muffins out of the mix instead and was amazed that the batter yielded six lovely muffins. They needed to bake for about 18-20 minutes at 350 degrees in order for a toothpick to come out clean. I used monk fruit sweetener for the sugar and unsweetened soy milk. I sprinkled a mixture of cinnamon sugar on the top of each before baking. The texture of the final product was a little different from a traditional muffin but absolutely delicious -- and I ended up with a half dozen!!

Instead of putting the cinnamon straight in with the rest of the batter, I mixed it with some brown sugar in a separate dish, added just enough oil to make a thick paste, then swirled/marbled it through the batter with a knife.
