I remember when I went gluten-free. I had an endless search for the best gf pasta, which, luckily, I have found over the years. It was so hard at the time as some pasta and noodles were so gummy, fell apart as I boiled them for too long, and it just didn't taste right. I was on a mission to make the best possible gf egg noodles, and I am so excited to share them with you.
Being celiac or reducing or not having wheat in your diet doesn't need to come with limitations on our favorite foods, especially noodles!
WHY YOU’RE GOING TO LOVE THESE GLUTEN-FREE EGG NOODLES
Basic ingredients - With basic pantry staples and a couple of eggs, you'll be on your way to making these gf egg noodles in no time.
Easy to make - It is actually easier to make than you think.
No fancy equipment - You don't need any fancy equipment. You can use a pasta maker if you have one, but it is not necessary.
INGREDIENTS IN GLUTEN-FREE EGG NOODLES
Flour - Use a gluten-free flour blend and have additional for dusting.
Eggs - 3 whole eggs and 2 egg yolks.
Salt and oil - Regular table salt and a decent quality virgin olive oil.
Water - Warm water plus more as necessary.
EQUIPMENT NEEDED FOR THIS GLUTEN-FREE EGG NOODLES
Mixing bowls - These Pyrex mixing bowls come in handy and they're dishwasher safe too.
Pot - You'll need a pot to boil the gf egg noodle portions in.

HOW TO MAKE GLUTEN-FREE EGG NOODLES
- Mix all the eggs and egg yolks, and water in a medium mixing bowl. Mix well and set aside.
- In a large mixing bowl, mix gluten-free flour, olive oil, and salt. Make a hole in the middle of the flour mixture and add the egg mixture to it.
- Stir them and if all is mixing well, move the dough on the floured flat surface and knead it using your hand for 10 -15 minutes. If the dough feels stiff, add more water until pliable. Form into a ball and cover with plastic wraps. Let it rest for 30 minutes.
- After 30 minutes, divide the dough into 4 parts. Start with one part of the dough. Wrap the remaining dough gently in plastic to prevent it from drying out.
- Put 1 part of the dough on the generous floured flat surface, sprinkle with more flour and roll it just up and down, then flip it. Fold both sides of the dough to the middle, flip, then roll it again up and down until very thin. The thinner, the better (around 1-2 mm).
- Sprinkle generous flour on the top of rolled dough, and fold in 2 inches from the edges, alternating up and down.
- Cut the dough into noodles, around ½ inch thick, then loosen them one by one and sprinkle them with flour. Make sure they don't stick to one another. Divide the noodles into 1 portion each.
- In a pan, boil enough water and add salt. Place a portion of noodles in boiling water and boil for 4-5 minutes depending on how thick your noodles are.
- Serve with your favorite sauce and garnish with chopped parsley

TIPS FOR MAKING THE BEST GF EGG NOODLES
Right texture - With variables in egg size and flour, making gf egg noodles is all about getting the right dough texture. It is likened to play dough. It is not sticky or dry.
Keep dough covered - Any unused dough needs to be covered in order to not dry out.
HOW DO I STORE GLUTEN-FREE EGG NOODLES?
Place the pasta in an airtight container in the refrigerator. I would suggest you use it within 3 days.
CAN I FREEZE GLUTEN-FREE EGG NOODLES?
Oh yes, definitely. Place it in an airtight container and freeze it for up to 1 month.
CAN YOU MAKE THESE GLUTEN-FREE EGG NOODLES AHEAD OF TIME?
Yes, you can. Be sure to consume them within 3 days or alternatively consider freezing them.
DO YOU NEED A FOOD PROCESSOR TO MAKE GLUTEN-FREE PASTA DOUGH?
No. You don't need a food processor you can mix this by hand.
ARE EGG NOODLES GLUTEN-FREE?
Traditionally egg noodles contained gluten as they were made from wheat. This recipe, however, is gluten-free. Make sure the ingredients you use are gluten-free.
DO YOU NEED A PASTA ROLLER TO MAKE GLUTEN-FREE EGG NOODLES?
No, definitely not. You can do it by hand following the details in my recipe card.
CAN YOU USE AN EGG SUBSTITUTE FOR THE EGG YOLK?
I would not recommend it, as these are called egg noodles. Eggs being the key ingredient.
CAN YOU FREEZE THE UNCOOKED GF EGG NOODLES?
Yes, these gf egg noodles freeze so well. Place it in an airtight container and freeze it for up to 1 month.
WHAT CAN I DO IF THE GF DOUGH IS STICKY OR CRUMBLY?
Sticky - Add more gluten-free flour.
Crumbly - Add more water and knead the dough some more.
WHAT SUBSTITUTIONS CAN I MAKE TO THIS GF EGG NOODLES RECIPE?
Egg-free or Vegan - I would not recommend replacing the eggs in this recipe.
Dairy-Free - These gf egg noodles are naturally dairy-free.
