Gluten-Free Enchiladas
Let's be honest, gluten-free enchiladas are not hard to make. In fact, they are super simple to prepare and the magic happens when they bake.
A lot of people are intimidated by enchiladas so I made a video (below) to show you how easy this gluten-free enchilada recipe is.
We make gluten-free chicken enchiladas at least once a month. All you need are a good, soft gluten-free tortillas, gluten-free enchilada sauce, chicken, and cheese.
If you're like me then you'll want to add a spoonful of refried beans to your filling (this is optional).
My family has been making enchiladas for years, since I was a child. You can freeze leftover gluten-free enchiladas for up to three months but I doubt they will last that long.
Are corn tortillas gluten-free?
I am often asked are corn tortillas gluten free. I talk about this a little more on my corn tortilla recipe post. Most corn tortillas are gluten-free. You'll want to check the ingredients on the packaging.
Also make sure to double check that the corn tortillas you purchase are made in a wheat free facility and not processed on the same equipment as other gluten containing ingredients.
We love making gluten free corn tortillas from scratch. My recipe is simple and uses only 3 ingredients.
Here's a list of a few brands that I typically reach for on the shelf.
Gluten-Free Tortillas

- Mission Gluten-Free Corn Tortillas
- Don Poncho Gluten-Free Corn Tortillas - I like to use these to make gluten-free enchiladas because they are soft and don't require pre-cooking for assembly.
- Guerrero Corn Tortillas
- BFree Flour Tortillas
- Siete Foods Tortillas
- Rudis Gluten-Free Tortillas
- Paleo Tortillas
- Low Carb Tortillas
I've probably missed a few but these are the gluten-free tortillas available in my area. When we purchase tortillas we tend to stick to the Mission Gluten Free Tortillas. We also like corn tortillas.
Not all of these tortillas are soft and they all have very different textures. I use gluten-free corn tortillas in my gluten-free enchiladas recipe.
Most corn tortillas are firm and need to be precooked for enchiladas but we have a brand in our area (Don Poncho) that is soft enough to roll uncooked.
I also use the Don Poncho tortillas when I make gluten free tacos.
Is cheese gluten free?
Yes, cheese is naturally gluten free. Sometimes packaged shredded cheeses include wheat to help prevent caking. Make sure to check labels of packaged shredded cheese just in case.
There are only five ingredients in this gluten-free enchiladas recipe. Again, be sure to check the ingredients label on your gluten-free tortillas and your gluten-free enchilada sauce.
Not all enchilada sauce is gluten-free. Some contain wheat or other glutinous ingredients.
Gluten-Free Enchilada Sauce
I have a few homemade gluten-free enchilada sauce recipes that I like to use but when I use a store bought gluten-free enchilada sauce I like to use the following:
- Hatch Enchilada Sauce
- Simply Organic Simmer Sauce
- Las Palmas
Please always check labels on gluten-free enchilada sauce as the ingredients may change at any time.
I prefer to use Hatch Enchilada sauce when I make gluten-free chicken enchiladas because it's a brand that is dedicated to being gluten-free.
Gluten-free enchiladas have never been simpler!
How to make gluten-free enchiladas
- Make sure you have all your ingredients ready to assemble.
- Pre-heat your oven to 375F and spray a large baking pan with oil. You can use your oil of choice. This helps prevent sticking.
- If you use the Don Poncho corn tortillas you wont need to heat your tortillas. If you use a firmer brand, heat them in stacks of 6 in the microwave with a damp paper towel over them for 30 seconds. This will help them become more pliable for rolling.
- Pour some enchilada sauce onto a plate or pie plate and dip your tortilla into it. Flip it to coat the other side.
- Add a spoonful of refried beans (optional) to the center and spread it.
- Add a heaping spoonful of cooked chicken and then top with shredded cheese.
- Carefully roll the tortilla from one side and then place it into your pan. The tortilla may break a little. That's okay, your going to cover it with more enchilada sauce and cheese. No one will notice.
- Once you have all your enchiladas rolled and tucked into your pan, drizzle more enchilada sauce over the top and then top with shredded cheese.
- Bake in the oven for 20-25 minutes or until the centers are heated and the cheese is melted.
- Serve hot.
You can use your favorite brands in this recipe and your preferred cheese. I like to use shredded medium cheddar when I make gluten-free enchiladas.

- 2, 15oz. cans gluten-free red enchilada sauce
- 16oz. can of refriend beans, heated (optional)
- 4 cups cooked chicken, chopped
- 2-4 cups of shredded cheddar cheese (or dairy-free cheese or cheese of choice)

This recipe is absolutely delicious. In lifting the first enchilada out of the pan, it fell apart. I came back to review your recipe this morning and I think I may have used too much sauce. I compared mine to your photo and it looks like it. It may have had something to do with the brand corn tortillas I used as well. I’ll work on perfecting it because the flavor was outstanding. We love Frontera GF sauce in a bag.

We love Frontega too!! We love the Verde sauce much better than the red One thing that I do, is a top everything with cheese, the cheese prevents the enchilada from falling apart I scoop out 2 to 3 at a time, And it all sticks together pretty well ☺️makes it right to the plate. We use dairy free ‘So Delicious’ Mexican blend, after I sauce it a poor bag of cheese all over and it melts nicely. Good luck.

How long should you reheat this for after you've baked it and then frozen it? Is there any changes to the recipe, like upping the temperature or cooking it for longer?

From frozen, you reheat it for 40 minutes or until it's heated through.
