INGREDIENTS IN GLUTEN-FREE HOT CROSS BUNS
FOR HOT CROSS BUNS:
Flour - 1 ½ cups gluten-free all-purpose flour
Cornstarch - 5 tbsp cornstarch.
Sugar - ½ cup sugar.
Yeast - 2 tsp dry quick yeast.
Cream of tartar - 1 tsp cream of tartar.
Seasoning - cinnamon, salt, pumpkin pie spice.
Dried fruit - Dried currants and dried cranberries.
Nuts - 2 tbsp crushed almonds.
Lemon - 1 tsp lemon zest.
Orange - 1 tsp orange peel.
Vanilla extract - Use good quality vanilla extract.
Vinegar - 1 tsp apple cider vinegar.
Eggs - 2 eggs at room temperature.
Butter - ½ cup melted unsalted butter.
FOR GLAZE:
Sugar - Use powdered sugar.
Orange - 2 tbsp orange juice or milk.

Whisk - I like to use a stainless-steel whisk.

HOW TO MAKE GLUTEN-FREE HOT CROSS BUNS
- Preheat the oven to 360F. Pour flour, starch, sugar, quick dry yeast, and cream of tartar into a deep bowl, mix with a whisk.
- Add spices, lemon and orange zest, salt, and mix again.
- Add vinegar, vanilla, and butter.
- Add eggs and start mixing everything. As a result, you should get a soft sticky dough, do not add a lot of flour, otherwise it will turn out to be too dense. If you see that there is not enough liquid, pour in some milk.
- Add dried currants, dried cranberries, and chopped almonds.
- Stir again, cover the bowl with cling film and leave for half an hour in a warm place. During this time, the dough will increase slightly in size and become even softer and fluffier.
- Divide the dough into 6 parts.
- Form each piece of dough into a small bun about 3 inches in diameter. Transfer the buns to a baking sheet lined with parchment, cover with cling film and leave for another 15 minutes.
- On top of each bun, make an incision in the shape of a cross.
- Grease each bun with sweet water made from a teaspoon of powdered sugar and 3 tablespoons of water. Put the buns in the oven and bake for about half an hour. Remove the buns from the oven and let cool slightly.
- Make a glaze with orange juice and powdered sugar. If you want the glaze to be perfectly white, use milk or water instead of orange juice, lemon juice is also suitable.
- Apply glaze to the cross-shaped cuts on the buns and leave to dry. Hot cross buns can be tasted as soon as they have cooled down a bit.

Let the dough rest - The resting of the dough is crucial to getting the correct rise.
Ice the buns once cooled - Wait for the GF hot cross buns to cool and then ice them or else the icing will melt.

Dried fruit - You can leave it out, but I do love it in. Try other dried fruit like dried apricots or raisins. You can experiment with any small, dried fruit.

Vegan - You would need to use an egg replacer and vegan butter. I have not tested this.
