When I was in preschool my mom would treat us to donuts on Fridays. We’d stop by the local donut shop on our way and I’d get a big sticky cinnamon roll with caramelized pecans on top. The topping was sweet and crunchy and the roll was gooey and tasted like vanilla.
It was a special treat, and probably the reason we celebrate Friday donuts with our girls every week.
Donut stores have changed quite a bit since I was four. The prices are much higher (with inflation) and the options are declining. Now that we eat gluten-free, we are even more limited in our breakfast treats unless we go to a bakery that only serves gluten free baked goods.
My husband and I want our girls to enjoy all the special treats we did growing up. Although we don’t have hours to spend in the kitchen making sticky pecan cinnamon rolls, we do have time to whip up a batch of these quick sticky pecan cakes every once in a while.
My girls love these and I’m sure you will too. The topping is crunchy and sweet and the cake has a perfect balance of vanilla and butter. If you’re not a fan of pecans, you can always replace the pecans with pineapple chunks or almond slices. Both are amazing atop these scrumptious little cakes. Enjoy!
