Meatballs Ingredients:
Butter - 1 tbsp butter
Onion - 1 onion, minced
Beef - 500 g Ground Beef.
Flour - ¼ Cup Almond flour
Seasoning - 1 tbsp garlic, minced, ½ tsp allspice, 1 tsp salt and 1 tsp black pepper
Egg - 1 egg, lightly beaten. This acts as a binding agent.
Cream - 2 tbsp heavy whipping cream
Gluten-Free Swedish Meatball Sauce ingredients:
Butter - 3 tbsp salted butter
Cream - ¼ Cup Heavy Whipping Cream
Broth - 1 ½ Cups Beef Broth
Mustard - 2 tsp Dijon Mustard
Flour - 2 -4 tbsp chickpea or almond flour
Seasoning - 1 tsp salt and 1 tsp black pepper

Mixing bowls - These Pyrex mixing bowls come in handy.
Skillet - I like to use a non-stick skillet.

How to Make Gluten-Free Swedish Meatballs
- Heat a large skillet to medium heat and melt the butter. Add the onion and cook for a few minutes until the onion is transparent. Remove from the heat and transfer to a plate. Set it aside.
- In a large mixing bowl combine the ground beef, almond flour, garlic, allspice, salt, pepper, egg, heavy whipping cream, and cooked onions. Mix well with your hands until everything is well incorporated.
- Using your hands form into small rounds (about 24 small ones or 14 larger ones).
- Heat a skillet over medium heat and drizzle with olive oil. Add the meatballs when the oil is hot and cook for a few minutes on each side. When they are cooked transfer them to a plate and set them aside. Cover the dish with plastic wrap to keep them warm.
- To make the sauce add the butter to the same pan without cleaning it (the bits from the meatballs add to the flavor).
- When the butter melts, add the heavy cream and Dijon mustard, and stir. Add half of the beef broth and bring to a boil. Bring to a boil and reduce the heat to low. Cook for a few minutes, add flour, salt, and pepper, and make the slurry. Add more of the beef broth if the sauce is too thick.
- Return the meatballs to the pan when the sauce is ready. Coat them with the sauce and transfer them to a serving plate. Serve with chopped parsley with mashed potatoes or cauliflower.
