With two kids, a hard working spouse, and a to-do list that’s longer than Texas is wide, I look to easy recipes that use minimal ingredients. This Gluten-Free Vegan Salted Chocolate Tart is super simple, allergy-friendly, and won’t leave a mess in your kitchen. It’s the exact type of recipe that I like to make when I’m in a pinch for time, or don’t want to spend hours cleaning up afterwards.
We’re huge fans of Enjoy Life Foods products in our house. I love that everything is safe for my family to eat, and it tastes delicious. This Valentines Day I decided to make my husband and girls each a chocolate tart. I plan on wrapping each one in a clear bag, tying a bow on top and a cute little paper heart that says, “With love”.
These tarts are simple enough that even my ten-year-old could make them. All you do is crush cookies (or pulse them in a food processor), mix in some melted chocolate and water, and press the cookie-crust mixture into a tart pan. If you don’t have a tart pan, no worries, you can always make mini-tarts by pressing the mixture into the bottom and up the sides of a muffin tin. After that, you heat up the ingredients that make the smooth, creamy filling and refrigerate. See how easy that is?
If you have a hard time removing the tart from the pan, place each tart into 1/2 inch of hot water, being careful not to spill the water into the tart pan. Let it site for 20 seconds and then use a spoon or rubber spatula to loosen it.
Just look at how wonderful the tart holds together (pictured above) when cut in half to share with your loved one. The cookie crust adds the perfect amount of crunch to go with each bite of smooth chocolate filling.
