I'll just get right to it, the special ingredient in these almond flour paleo chocolate chip cookies is flax seed meal (ground flax seed).
I've tried so many paleo cookie recipes that were good but I couldn't find one that had the same texture of a regular bakery style chocolate chip cookie. After many tests I found that flax seed meal was the key to the perfect texture of these paleo chocolate chip cookies.
The flax seed meal in this paleo chocolate chip cookie recipe adds some extra fiber, really helps shape the cookies, and gives these paleo cookies the PERFECT texture. INGREDIENTS IN PALEO CHOCOLATE CHIP COOKIES
For this healthy chocolate chip recipe, I use a few simple ingredients that most people have on hand.
Coconut Oil - I like the light flavor of coconut oil in this cookies. Butter can be used as well.
Coconut Sugar - This is my favorite paleo friendly sweetener, particularly for baking. We are using it here to replace the brown sugar usually found in chocolate chip cookies.
Egg - To hold everything together, an egg works nicely.
Vanilla Extract - Be sure to use a gluten free vanilla extract. This gives great flavor to our paleo cookies.
Almond Flour - A finely milled almond flour is the best to use when baking cookies.
Flax Seed Meal - Also known as ground flax seed, this is the key to the perfect cookie texture.
Baking Soda - This leavener helps the cookies to rise and crisp.
Salt - Salt is amazing and necessary in chocolate chip cookies. It elevates the richness of the chocolate.
Chopped Dark Chocolate - You can substitute any paleo friendly chocolate chip as well.

HOW TO MAKE PALEO CHOCOLATE CHIP COOKIES
You can make these healthy chocolate chip cookies in just a few simple steps:
- In a large mixing bowl with an electric beater, beat together the coconut oil (or butter if you do dairy) and coconut sugar until smooth.
- Add the egg and vanilla and continue to beat until smooth and creamy.
- Add in the almond flour, flax seed meal, salt, and baking soda and beat until combined.
- Fold in the chopped chocolate (or chocolate chips). Place in the refrigerator while you preheat your oven.
- Preheat the oven to 350ºF. Use a cookie scoop to scoop cookie dough into balls and place them on a parchment lined baking sheet two inches apart.
- Bake for 12 minutes or until the center is set and the tops are golden brown. Remove from the oven and slide the parchment paper off the baking sheet onto a cool surface.

ALMOND FLOUR CHOCOLATE CHIP COOKIES

Working with almond flour: When making almond flour chocolate chip cookies can be tricky if you're not used to it. Remember when measuring almond flour to spoon your flour into your measuring cup, then level it. Do not dip your measuring cup into the flour then level, it will be too much almond flour.

CAN I MAKE THESE COOKIES WITH OTHER SWEETENERS?
I haven't tested this, but I can assume that most granulated sweeteners, including regular cane or brown sugar, will work in this recipe. Liquid paleo sweeteners such as maple syrup will not work.

You really want to look for brands that only use cocoa and sugar. Avoid cheaper brands of chocolate chips that have extra ingredients.
HOW LONG WILL THESE PALEO COOKIES LAST?
I highly suggest eating this immediately after baking, but let them cool for a few minutes. Warm and gooey chocolate chip cookies are the best! Otherwise, these will keep well for about 3 days in an air tight container.
WHY IS MY PALEO COOKIE DOUGH SO STICKY?
Sticky dough is very common when baking with gluten free and paleo-friendly ingredients. It's totally normal! To make things easier, I like to use an oiled cookie scoop to form the cookies rather than trying to use my hands.

- 2 cups blanched almond flour (we use Bob's Red Mill)
- ¼ cup flax seed meal (ground flax seed)
- ½ teaspoon baking soda
- ¼ teaspoon salt (omit if using salted butter)
- 1 cup dark chocolate, chopped (or paleo chocolate chips)

They were delicious! I had to take mine out after 10minutes though and the tops were fine and they tasted great but the bottoms were burned - any thoughts on what I could have done wrong? They were in the middle rack at 350F. I used brown parchment paper - could that have done it? Still they were so good!!!!

Every oven is slightly different, it could be how your oven heats or where it holds more of it's heat. I'm glad they still tasted good. Once thing you can do is try to spread them out a little more, that way they cook quicker while the bottom is browning.
