Paleo Instant Pot Chicken Fajita Soup
It's cold outside and we are turning to comforting instant pot soups to help keep us warm. We are loving our Instant Pot and recently converted a family favorite recipe for Paleo Chicken Fajita Soup into Paleo Instant Pot Chicken Fajita Soup.
This Paleo Instant Pot Chicken Soup is hands-down one of the easiest, and most filling soups we've made. It's the perfect gluten-free chicken dinner recipe.
Super simple to throw together, ready in less than and hour, and almost mess-free, you are going to love this instant pot chicken soup! It's super healthy and flavorful. Add your favorite toppings and make it exactly the way that you want.
I've talked about it a bit in other posts, but we try to eat grain-free about 80% of the time. What that means is that we are grain-free with most of our meals, and allow ourselves an occasional gluten-free burger, gluten-free pizza, or treat.
My body doesn't do well with grains, so limiting how much gluten-free grains I eat is important to how I feel.
My husband on the other hand can tolerate grains just fine, so you might find him topping this Paleo Instant Pot Chicken Fajita Soup with some tortillas, or dipping a gluten-free quesadilla into the spicy broth.
Depending on the taco seasoning you use, this soup can get rather spicy. My husband and I like it spicy, but our girls don't. I usually use my homemade taco seasoning (it's pretty mild) and then top our soup with jalapenos for an extra kick.
We occasionally throw some avocado on top, or dairy-free sour cream. A squeeze of lemon on top really helps pull all the flavors together.
If you don't like spicy foods you can cut the amount called for in this Paleo Instant Pot Chicken Soup recipe in half.
You can use chicken breast in this recipe instead of chicken thigh meat. Fresh and frozen chicken both work, and the time stays the same. I don't count macros, but this recipe is fairly low in carbs and high in protien.
If you're not worried about your carb intake, you can add some black beans for extra flavor and texture.

Sure. You can make this Paleo Instant Pot Chicken Soup in a slow cooker. Just throw all the ingredients into a slow cooker, set it to low and let it cook for 4-6 hours, depending on the size of your slow cooker.

Paleo Instant Pot Chicken Fajita Soup
Paleo Instant Pot Chicken Fajita Soup that's healthy, bursting with flavor, and super filling. Top this delightful soup with your favorite toppings!
Ingredients
- 1 ½ cups crushed tomatoes
- 1 cup chicken broth
- 1 oz. taco seasoning
- 1 red bell pepper, seeded and sliced
- 1 small onion, sliced
- 1 ½ lbs. frozen (or fresh) chicken thighs
Instructions
- Add tomatoes, broth, and taco seasoning to the instant pot.
- Add bell pepper and onion.
- Stir to mix.
- Add chicken.
- Place the lid on and turn it to lock it.
- Set the instant pot setting to manual for 12 minutes.
- Once done, press the pressure release valve.
- Once pressure has been released, remove the lid and stir to mix.
- If desired, shred the chicken before serving.
- Top with your favorite toppings and enjoy!

I made this last night but we have a large family so I used more chicken, doubled broth and tomatoes added a can of mild rotel, a little extra smoked paprika and cumin and two cans of black beans as we are not Paleo. I also cooked a pot of rice at the same time and added a scoop to each bowl!! This was loved by everyone! Great recipe!
