Instant Pot Beef Tips
Dinner time can get boring. Rotating the same recipes in week in, week out. I'm so glad we bought an Instant Pot .
Without it we wouldn't be able to cook some of our favorite meals, like these Paleo Instant Pot Beef Sirloin Tips on a busy weeknight. They are seriously the easiest Pressure Cooker Beef Sirloin Tips.
How many times have you forgotten to plan dinner? Or take out frozen meat to defrost for dinner? I do. All the time.
We are busy almost every night of the week, and being able to throw a meal in our instant pot before we do our evening activities has been a saving grace.
We love it so much that we make Instant Pot Meals at least once a week.
Instant Pot Beef Sirloin Tips
Both my husband and I have busy schedules and both of our girls play sports. At least once a week we are either too tired to cook, or we forgot to plan what we were having that night.
These Paleo Instant Pot (Pressure Cooker) Beef Sirloin Tips have been our favorite for some time now. The savory sauce is incredible, and the steak tips tender.
I posted the original recipe for these Slow Cooker Beef Sirloin Tips last year. This recipe is an upgrade with Instant Pot instructions.
These beef tips are ready in no time at all. You can serve these instant pot beef tips with some steamed veggies and roasted red potatoes for a simple and quick meal.
How to make Instant Pot Beef Tips
- Place beef sirloin tips, sliced mushrooms, chopped onions, and sherry into your instant pot or pressure cooker.
- In a small mixing bowl, whisk broth and tapioca starch. Add to instant pot.
- Add seasonings.
- Stir it all together.
- Place lid on the instant pot and turn it until it's locked into place. Set the timer to manual for 15 minutes.
- Once done, release the pressure valve. Stir before serving.

Beef Tips Instant Pot
There are only a few ingredients in this slow cooker beef sirloin tips recipe and you don't have to use steak tips. You can also cut sirloin steak into smaller pieces.
If you are starting with frozen beef, keep the time the same. It'll still be perfect, I promise.
I have made this recipe several times and I have had no problems with it. The pressure cooker keeps the moisture in and pulls all the flavors together.
I have a 6QT Ultra Instant Pot. The buttons on most instant pots are the same, but if you don't see the setting you need on your instant pot, please ask.
Tips for making Instant Pot Beef Tips
Always follow the recipe and do not cut away the extra fat from the meat. The fat adds flavor and helps to keep the steak from getting to dry.
There is a bit of extra sauce with the steak tips when it's finished cooking - and just a little tip, the sauce makes an AMAZING gravy.
You can quick release the pressure or let the pressure release naturally.

Ingredients
- 16 oz. beef sirloin tips (I used sirloin from Butcher Box)
- 2 cups sliced mushrooms
- ½ small onion, chopped
- ¼ cup cooking sherry
- 1 cup beef broth
- 2 tablespoons tapioca starch (or cornstarch)
- ½ teaspoon garlic powder
- ¼ teaspoon cracked pepper
- ¼ teaspoon sea salt (or to taste)
Instructions
- Place beef sirloin tips, sliced mushrooms, chopped onions, and sherry into your instant pot or pressure cooker.
- In a small mixing bowl, whisk broth and tapioca starch. Add to instant pot.
- Add seasonings and stir.
- Place lid on the instant pot and turn it until it's locked into place.
- Set the timer to manual for 12 minutes.
- Once done, release the pressure valve.
- Stir before serving.

I love that this is paleo gluten-free and easy to make cause you can do it all in the instant pot. I am all about the beef broth, I would use bone broth for extra collagen and gut health.

It happened to me, too. I had to take it out and wash the pan and try again. There was plenty of liquid. Internet says the “burn” reading might be due to adding the cornstarch. Next time I will leave that out and thicken some of the broth on the stove afterwards and add it back to the rest of the ingredients.

What size instant pot are you using? I went ahead and made this yesterday again and I didn't have any challenges making it in my 6 quart instant pot ultra. I also made it a second time with 1 cup of broth (instead of 1/2 cup, and updated the ingredients) for those that are having trouble with it sticking. It had a little more liquid at the end but it was still amazing. The only thing I can think of is maybe you have a different sized IP? Or maybe it's sitting too long after cooking? Let me know. I really want to help you figure it out as this is such an incredible dish. 🙂

Yes, frozen beef tips will work. I'd add 3-5 minutes to the cooking time.

Does omitting the mushrooms change the liquid measurements of this recipe? Does it alter the flavor? I don’t have mushrooms, but would really like to make this tonight for dinner.

Omitting the mushrooms wont change the liquid, but it will change the flavor some. It should still be savory and delicious.

Just made this tonight. I didn't add the tapioca starch into the Instant Pot for the cooking. I added it afterwards to thicken the liquid into a gravy (side note: I followed the box directions, mixing the starch with cold water to avoid clumps, and then slowly added that into the cooked liquid). It was delicious, but I do think it doesn't need to cook as long. I also personally like my meat more towards the rare side. I'd like to try 15 mins next time, though not sure if that's long enough for the mushrooms and onions, so it might need to be a dish that has two steps for cooking 🙂

Using red wine instead of cooking sherry because a) I don't have cooking sherry, and b) I like red wine. Also didn't have fresh mushrooms so rehydrated some dried shiitakes I had on hand. Hopefully it turns out well!

Yummy! This was absolutely delicious! We cooked frozen beef tips, 30 minutes on stew/meat setting. I used tapioca starch in 1 cup of beef broth- no burn. Thank you for a fabulous recipe!
