Are you wondering why these cookies aren’t green, even though they have SunButter in them? Sunflower seeds contain Chlorogenic acid. When you mix SunButter with acidic baking agents, like baking soda and baking powder, they turn baked goods green as they cool. Fun – right!
Well yes if you are OK with eating green colored food (I am). But I left it out of this recipe, so my kids wouldn’t freak out and think that I added spinach or kale to these cookies 😉
These SunButter® breakfast cookies are super simple to make and they are healthy. They are free from gluten, dairy, nuts, and refined sugars (except the chocolate chips, but I couldn’t leave those out). They only take twelve minutes to bake. Bake up a batch for an easy grab-and-go breakfast or balanced snack.
This recipe make 6 giant breakfast cookies. You can easily double or triple the batch to make more. Cookies for breakfast!! My kids went nuts when I told them they could eat cookies for breakfast. I didn’t tell them that they were actually pretty healthy. That’s a secret between you and me.
The SunButter in this recipe adds depth to the texture and other flavors. It acts as a binder, and similarly to oil, which is why you don’t have to add a lot of oil. You could even replace the oil with applesauce to make these cookies oil free.
