I craved bread when I went gluten-free, and it was so hard as store-bought never really satisfied that crunch I missed. It was also super expensive years ago. I decided to create this bread so that if you are vegan and gluten-free, you too can enjoy bread that doesn't cost an arm and leg.

VEGAN GLUTEN-FREE BREAD RECIPE
I loved testing this bread and producing ingredients to make it naturally gluten-free and vegan too. This bread is everything you would expect from a wheat loaf, but in my opinion, better.
And yes, it is egg-free, dairy-free, and xanthan free too. I have added in a few suggested substitutions to try, but where possible, stick to the ingredients suggested. It is perfect for sandwiches and dipping bread for soup season. Look out for the tips below for success.
WHY YOU’RE GOING TO LOVE THIS VEGAN GLUTEN-FREE BREAD
Naturally vegan - This GF vegan bread has no dairy and no eggs, making it a naturally vegan bread that you can enjoy.

INGREDIENTS IN VEGAN GLUTEN-FREE BREAD
Water - Use warm water.
Syrup - I used maple syrup, but you can use coconut sugar or organic granulated sugar.
Yeast - Use instant yeast.
Aquafaba - Use aquafaba. This is the water in which chickpeas or other pulses are soaked in.
Lime juice - Use a lime for freshly squeezed lime juice.
Flour - I used gluten-free all-purpose flour and oat flour. I have not tested it, but if you have an oat flour intolerance, try using buckwheat flour or more sorghum flour.
Baking powder - 2 tsp. baking powder. Make sure it's gluten-free.
Salt & oil - 1 tsp. salt and ¼ cup canola oil.
Vinegar - 2 tsp. apple cider vinegar.
EQUIPMENT NEEDED FOR THIS VEGAN GLUTEN-FREE BREAD
Stand Mixer - Use a stand mixer to make the dough mix nicely.
Mixing bowls - These Pyrex mixing bowls come in handy.
Loaf pan - I have used a 9.5x5 inch loaf pan.

HOW TO MAKE VEGAN GLUTEN-FREE BREAD
- In a small bowl, mix water, maple syrup, and instant yeast. Cover with a warm towel and let it rise for 5-10 minutes until foamy.
- In a bowl, mix gluten-free all-purpose flour, oat flour, baking powder, and salt. Set it aside.
- In a mixing bowl, using a standing mixer with the whisk attachment, mix the aquafaba and lime juice until they stiff peak. It will take 4-5 minutes depending on your mixer speed. Scrape down the aquafaba fluff into a bowl. We will use the mixing bowl to make the bread dough.
- In a mixing bowl that we used to mix aquafaba, change the attachment to a paddle attachment. Add the yeast mixture and dry ingredients. Mix well until incorporated.
- Add the oil, mix well then add the apple cider vinegar.
- Mix well on Medium-High for 2-3 minutes until dough is smooth but wet & sticky.
- Stop the mixer and add in aquafaba fluff.
- Mix gently on low speed until dough is well combined, around 30 seconds. Do not over-mix.
- Prepare a 9.5x5 inch loaf pan and grease it with oil.
- Scrape down the dough and cover the dough using a warm kitchen towel for 20-30 minutes.
- Preheat your oven for 10 minutes to 350F. After the dough is rested, bake for approx. 50-60 minutes. If the crust darkens too quickly, you can cover it with foil (but do it fast) and return to baking until done.
- Remove the loaf pan from the oven and let it cool for 1-2 minutes before turning it out onto your cooling rack.

TIPS FOR MAKING VEGAN GLUTEN-FREE BREAD
Egg-free - This vegan GF bread will rise and then shrink to the same size you originally had before when you placed it in the oven. This is normal for egg-free baking and is called shrinkage.
Remove from loaf pan - Remove your vegan GF bread from the loaf pan in the first few minutes. This helps your loaf not sink and become dense.
HOW DO I STORE VEGAN GLUTEN-FREE BREAD?
You can store this vegan GF bread in an airtight container for up to 1-2 days. Make sure it is not in direct sunlight. I tend to place it in the refrigerator and use it for toast after that, but it's entirely up to you.
CAN I FREEZE VEGAN GLUTEN-FREE BREAD?
Yes, wrap this vegan GF bread in plastic wrap or place it in an airtight container. This can be frozen for up to 2 months.
CAN YOU MAKE VEGAN GLUTEN-FREE BREAD AHEAD OF TIME?
Yes, you can. I would, however, suggest you freeze it if you need it for a later period.
