When it comes to desserts our family definitely loves all types and varieties. Cheesecake is right at the top of the list. But if you prefer a standard-size cheesecake you can make this Gluten-Free Cheesecake. That's very similar to what I made here, except these are bite size!
Cheesecake Bites Recipe
My son absolutely loves cheesecake. It's adorable. Whenever my son sees cream cheese, he excitedly asks if I’m making cheesecake. It's one of those desserts that is just so worth making and his face lights up when he eats it. I am sure he has extra taste buds as you can see from the expression on his face that he is enjoying it.
I love these cheesecake bites when we are serving a crowd. They are easily taken by hand with no slicing and mess. They work perfectly as a portable dessert for dessert spreads for special events or family gatherings. And this cheesecake is smooth. The gluten-free biscuit base, thanks to the graham crackers, gives the perfect blend of flavor.
Why You’ll Love This Recipe
Portable dessert. I love the fact that I can place these on the dessert table and it makes for a quick cleanup.
Easy to make. These bites are easy to make and cheesecake is a lot easier to make than you think.
Tastes great. The combination of the cheesecake and biscuit layer is just so good.
Main Ingredients For This Cheesecake Bites Recipe
These ingredients are easily available at most stores. Let's take a look at each ingredient in a bit more detail.
Where To Buy Cheesecake Bites Ingredients
Most of these ingredients are available at the supermarket. You can also find them at Costco, Walmart, Kroger, or Amazon. The trickier ingredients would be premade gluten-free graham crackers. You can easily find them online, but I like to make my own.
When you're shopping for the ingredients for the crust, make sure to avoid graham flour (which is used in many graham crackers).
Equipment Needed For This Cheesecake Bites Recipe
I like to use my hand mixer for the blending of the cream cheese filling but you can also use your stand mixer with a paddle attachment. A medium-sized mixing bowl works well so you don't get all the ingredients spluttering all over your counter. I've used a muffin tin with silicone baking cups. They work well and make cleanup a breeze.
How to Make Cheesecake Bites
I've included as many visuals as possible so you can see the process. It is easy to prepare, the hardest part is the time it takes to set.
Prepare the Muffin Cups
Line a muffin tin with silicone baking cups. I'm using multi-colored cups here, but you won't need them for the final product. The crusts will hold the cheesecake just fine without cups when they're done.
Make the Crust
Combine crushed gluten-free graham crackers, powdered sugar, and melted butter in a medium bowl and mix well.
Press and Bake the Crust
Transfer the graham cracker crumbs to the muffin silicone cups (cupcake liners) and press into an even layer using your fingers or the back of a measuring cup. These are the crusts, so they don't need to take up the whole cup.
Bake until lightly golden. Let cool.
Mix Cream Cheese and Sugar
Meanwhile, mix cream cheese and powdered sugar together at low to medium speed until fluffy.
Add Eggs
Add eggs one at a time, mixing well between each egg.
Add the Remaining Ingredients
Add the sour cream, lemon juice, and vanilla extract. Mix until smooth.
Fill and Bake
Pour into the prepared muffin silicone cups and smooth the tops. Bake for 30-35 minutes, until the cheesecake is mostly set but still jiggles just a little in the center when shaken. Note that this is a little shorter than the full-size cheesecake (which bakes for 45 minutes).
Cool and Serve
Turn off the oven and crack the door, allowing the cheesecake to cool for 20 minutes in the oven. Serve with variations like fruit compote, fresh fruit sauces, lemon curd, or whipped cream.

What temperature are these supposed to be baked? I could not find a temperature anywhere in the recipe so I went with the standard 350 degrees Fahrenheit. I had to take them out at 35 minutes because most had already turned brown on the top and were overcooked.
Jim
Yes, 350 is correct. We will make that more clear in the recipe card. Thanks!
