So once you have added dumplings to soup, there is no turning back. If you are anything like me, you'll love these as they soak up the beautiful liquid, which is delicious.
Consider this as amping up your soup. From being tasty to being a comforting bowl of goodness, especially on a cold winter's night. And, yes, I am guilty of dipping bread in my soup with a thick spread of butter (ok, more than what's needed), so this is a better option for me.
And, we really love soup, but plain soup won't do, so we also add in dumplings or even gluten-free croutons, depending on the soup we are making. There's just something so comforting about the texture they add.

What's in These Gluten-Free Soup Dumplings?
Don't let the number of ingredients scare you off if you want to make our complete gluten-free chicken and dumpling soup. Or else if you just want to snag the dumplings, it only has 6 ingredients.
For the gluten-free dumplings:
Flour - Use an all-purpose gluten-free flour, not wheat flour that contains gluten. Look for items labeled according to FDA regulations. This means the product contains less than 20 parts per million (ppm) of gluten ingredients, which is considered safe for people with celiac disease. Be careful of different information on labels.
Xanthan gum - Always check the actual product packaging of your gluten-free flour blend to confirm whether xanthan gum is already included. If not, add it in. Check it in-store so it saves you a trip back. (Here's a USDA guide to xanthan gum).
Baking powder - This will make your dumplings soft and fluffy.
Salt - This is added for taste.
Eggs - These add rise and richness to the dumplings. An egg replacer has not been tested, but if the availability of eggs or price is a concern, give it a go and let us know in the comments.
Liquid - You can use chicken broth or milk.
There are also optional ingredients. The dumplings go really well with scallions and ginger, for example. And you can also sautee them in chicken fat or duck fat for a more robust flavor!
Equipment Needed For These Gluten-Free Soup Dumplings
Some mixing bowls to make the dumplings. A large pot to make the soup and a nice soup ladle to dish those dumplings out carefully.
How To Make Gluten-Free Chicken Soup Dumplings (Recipe In Six Steps):
This is a collage of the process of making these gluten-free soup dumplings with a soup. But jump ahead to step 5 if you just want the dumplings. The gluten-free chicken and dumpling soup recipe is what I used.

Cook The Chicken
Add chicken meat to a large pot over medium-high heat with bay leaves. Pour in enough water to cover the chicken (about 4–6 cups). Bring to a boil and cook for 30–45 minutes until fully cooked. Remove the chicken, discard skin and bones if desired, and set the meat aside.
Let the chicken soup base simmer gently after removing the chicken to develop the authentic flavor while you prepare the vegetables.
Sauté the Vegetables, Thicken and Build the Soup
In a large, heavy-bottomed saucepan, heat olive oil, canola oil or sunflower oil over medium-high heat. Add chopped onions, carrots, celery, salt, and pepper. Stir to combine and cook for 8–10 minutes, or until vegetables are fork-tender.
Reduce heat to medium-low. Sprinkle gluten-free flour over the cooked vegetables and stir for 2 minutes. Add in the shredded chicken, chicken broth, cream, and frozen peas. Stir, then cover and simmer for 5–10 minutes so that the natural juices meld and you can then prepare the dumplings.
Prepare And Cook The Gluten-Free Dumpling Dough
Combine gluten-free flour, baking powder, salt, and xanthan gum (if your flour blend doesn’t already include it). Add beaten egg and chicken broth. Stir until a sticky, thick dough forms. The CDC recommends avoiding raw dough or batter even for tasting.
Using a spoon or cookie scoop, drop spoonfuls of the dumpling mixture into the simmering soup. Do not stir. Cover the pot and simmer over medium heat for 15 minutes, allowing the dumplings to cook through.
Portion and Serve
Once the dumplings are cooked and fluffy, ladle the dumplings into bowls. You can serve it with the soup too. Just taste it, and adjust the seasoning with more salt and pepper if needed.

Tips for How to Make Gluten-Free Soup Dumplings
- Don't overmix the dumpling batter - Mix the batter until it is just combined.
- Rest the dough - If you can let the dumpling dough rest for 5-10 minutes. This helps the flour hydrate.
- Rolling simmer - Add the dumpling dough to a rolling simmer with the chicken soup base or whatever base you are preparing. It must not be boiling, or else they will break apart.
- Season at the end of cooking - The dumplings absorb the liquid, so do a final taste test at the end of the cooking. Don't burn your mouth.

How Long Can I Store It?

Can I Freeze It?
You can freeze this soup with the dumplings in it for up to 2 months. Portion each serving of food into airtight containers so you have the convenience of reheating throughout the week. I prefer to freeze the soup and make the dumplings when I am reheating the soup. They have a better texture.

Gluten Free Soup Dumplings
Add these gluten-free soup dumplings to your favorite soup broth. They're delicious with chicken noodle or veggie-based soups!
Ingredients
- 2 cups all-purpose gluten-free flour
- ½ tsp xanthan gum, omit if your flour blend already contains gum
- 2 tsp baking powder
- 1 tsp salt
- 2 large eggs, beaten
- 1 cup chicken broth, or milk
Instructions
- Add the flour, baking powder, salt and xanthan gum (if using) in a large bowl. Mix to combine then add the beaten egg and chicken broth. Mix until well combined.
- The dumplings should be sticky and thick. Drop spoonful’s (you can use a cookie scoop) of the mixture into the pot of soup and don’t stir the soup. Cover and simmer over medium heat for 15 minutes.
- Taste the soup and season with additional salt and pepper if needed. Garnish with some fresh chopped parsley and serve hot.
