What Makes it Special
The main recipe uses oats, and according to Beyond Celiac that's ok as long as the oats are certified gluten-free. But the recipe shines because of its versatility, and that means you can skip the oats altogether.
The best alternatives to oats, at least for this recipe, are quinoa flakes and crushed gluten free crackers. If you don't mind a softer loaf, you can also swap in bread crumbs. Just note the texture changes that come with using something less absorbent.
