    Meatloaf Upgrade: Why Use Gluten-Free Ingredients

    I've got to admit, I grew up without a taste for meatloaf. That's uncommon in the midwest. This dinner staple is as popular around here as mayonnaise-based "salads", and it took the right recipe for me to come around to it.

    The meal only takes 10 minutes to put together, and it's ready to serve after about an hour. That makes it a quick and easy gluten-free meal for the work week. And some have described it as 10 times better than regular meatloaf.

    Replacing the meat with beyond meat makes this meatloaf into a meatless loaf. And that's awesome. I love Beyond (BYND) burgers and Impossible meat. Using them in this recipe was an inspired choice.

    It doesn't need to be better than a family recipe. What makes this meal so perfect is how easy and versatile it is.

    What Makes it Special

    The main recipe uses oats, and according to Beyond Celiac that's ok as long as the oats are certified gluten-free. But the recipe shines because of its versatility, and that means you can skip the oats altogether.

    The best alternatives to oats, at least for this recipe, are quinoa flakes and crushed gluten free crackers. If you don't mind a softer loaf, you can also swap in bread crumbs. Just note the texture changes that come with using something less absorbent.

    If you want to swap out the oats, here's the recipe for gluten-free breadcrumbs.

    This recipe also calls for sometimes unconventional ingredients. Many gluten-free chefs avoid soy sauce and Worcestershire sauce. But that's not always necessary. As long as the sauce is certified (or made from scratch with gluten-free ingredients), it can add a mouthwatering umami flavor.

    Serving Suggestion

    But even with baked-in veggies, meatloaf on its own isn't a full dinner. Those looking for an easy side dish should check out the classic gluten-free green-bean casserole recipe.
