It wasn’t so long ago that the macaron, a delicate French sandwich cookie made with almond flour and filled with ganache or buttercream, seemed to be everywhere. Once a niche Parisian treat, macarons exploded into the mainstream in the 2010s thanks to boutique bakeries, Instagram-friendly colors, and a public fascination with their airy texture and elegance. They became synonymous with culinary refinement, dessert blogs, and even wedding favor tables.
But like many trend cycles, the spotlight has begun to shift. Now, a new old treat is working its way into the cultural consciousness: nougat.
Long considered a holiday confection or a component in mass-market candy bars, nougat is beginning to shed its outdated image. Recent market analysis suggests that nougat may be undergoing a quiet renaissance. According to a 2023 report, the global nougat market, valued at $370 million in 2022, is projected to grow to more than $635 million by 2032. That kind of steady, global expansion hints at more than nostalgia. It suggests a shift in how consumers are thinking about sweets.
Nougat’s appeal lies in its versatility. And there are many regional varieties. There's the soft French-style nougat (nougat de Montélimar), chewy Italian torrone, and nut-packed Spanish turrón, to name a few.
They all share a common base of whipped egg whites, sugar or honey, and nuts. The texture ranges from soft and marshmallow-like to firm and chewy, depending on how it’s made.
In recent years, nougat has found new life as a gourmet item. Artisan producers have begun offering small-batch versions featuring pistachios, cranberries, rose petals, or dark chocolate. It is also cropping up in gift boxes and boutique candy shops where macarons once reigned supreme. On social media, food creators are experimenting with nougat recipes that are gluten-free, dairy-free, and naturally sweetened, tapping into modern dietary preferences.
Why Nougat Appeals to Gluten-Free Consumers
One of the strongest drivers behind nougat’s revival is its compatibility with gluten-free diets. Unlike baked goods that often require gluten-free flour substitutes, nougat’s base ingredients, sugar or honey, egg whites, and nuts, are naturally gluten-free.
That simplicity of a gluten-free nougat recipe makes it an attractive option for people with celiac disease or non-celiac gluten sensitivity who are tired of navigating ingredient lists and substitutions.
Still, many store-bought nougat products are made in facilities that also process wheat, which opens the door to cross-contamination. That risk is enough to keep some shoppers cautious. As a result, homemade nougat is becoming a go-to project in gluten-free kitchens.
Recipes that guide users through the steps of whipping egg whites and heating sugar to the right temperature have helped demystify the process. And since nougat is customizable, home cooks can add dried fruit, chocolate, or alternative sweeteners to suit personal tastes or dietary needs.
Nougat also satisfies a unique spot in the gluten-free dessert space. It is indulgent without being overly sweet, traditional without being boring, and satisfying without relying on flour at all. That combination makes it stand out in a market saturated with cookies, cakes, and muffins attempting to imitate their gluten-laden counterparts.
And there are many things people do with homemade nougat. That includes packaging them as edible gifts for Mother's Day, Father's Day, and even Halloween (for friends and family).
They're also turning up on dessert boards. Couples who like to make food together with date-night recipes are seeing the appeal of homemade confections. And that's not just for dessert. Nougat pairs very well with coffee.
Ultimately, nougat may never wholly replace the macaron in terms of daintiness or Parisian charm. But it doesn’t have to. It is carving out its own space, a nostalgic yet newly modern treat that bridges the gap between tradition and current food trends. As more consumers look for sweets that are both indulgent and adaptable, nougat is well-positioned to be the next big thing in the world of confections.
