GLUTEN-FREE CORN CASSEROLE RECIPE
This corn casserole comes together with minimal ingredients. It is easy to make so you can make it on the day or follow my make-ahead options below.
Experiment with assorted flavors by adding different cheeses like Monterey Jack Cheese, Mexican Cheese, or Colby Jack Cheese or add some spice with jalapenos. The options are endless.
Bear in mind that many people are of the assumption that Jiffy Cornbread mix is gluten-free. As always, I recommend you check labels whenever you buy any ingredients. I have included an option to make it with a mix, but this recipe is so simple you don't need one.

Easy to make -All you need to do is combine the wet and dry ingredients separately. Add them together and bake it. It's really that easy.

Flour - Use gluten-free plain flour.
Cornmeal - Be sure to use gluten-free yellow cornmeal and not corn flour.
Sugar - I use brown sugar. This adds a sweet taste to the dish. You can reduce or omit it or even add more sugar if you prefer it sweeter.
Baking powder - This makes the casserole rise.
Cheese - Grated cheddar cheese works well.
Corn - Frozen corn, fresh or canned drained corn works in this recipe.
Sour cream - Use sour cream, or for a dairy-free option, use dairy-free yogurt and a tablespoon of lemon juice.
Egg - Use 2 large eggs to bind the ingredients together.
Butter and salt - Unsalted butter and Salt for flavor. If using salted butter, omit the additional salt.

Baking dish - A 9x13 inch baking dish works well.

HOW TO MAKE GLUTEN-FREE CORN CASSEROLE
- Preheat the oven to 350° F. In a bowl, mix eggs, sour cream, sugar, and salt.
- Pour in the melted butter and stir with a whisk.
- Add dry ingredients to liquid ingredients - two types of flour, baking powder. Mix thoroughly.
- Add shredded cheese and drained corn.
- Mix the ingredients in a bowl.
- Transfer the casserole corn mixture to a baking dish and place in the oven. Bake for 40-45 minutes, then cut into pieces and serve. Sprinkle with additional grated cheese if desired before serving. TIP: Grill it for a couple of minutes for a crunchy top.
TIPS FOR MAKING THE BEST GLUTEN-FREE CORNBREAD CASSEROLE
Extra crispy - If you want an extra crispy top, grill it, but be sure to watch it. It can, however, burn easily, so keep an eye on it.
Add variety - Omit the sugar and make a savory version with cheese and even jalapenos if you like some added spice.
Bake it for the correct time - Be sure to bake it for the correct amount of time so it is cooked through. Oven temperatures vary so you may want to buy an oven thermometer.
IS CORN CASSEROLE THE SAME AS CORNBREAD?
Corn casserole is a Southern recipe. They are similar, but corn casserole is more moist.

CAN I MAKE SAVORY CORNBREAD CASSEROLE WITHOUT SUGAR?
Yes, you can. Omit the sugar and add 1 cup of cheese of your choice. If you like a bit of spice, add some jalapenos.
HOW DO YOU SERVE CORN CASSEROLE?
This is best served as a side for a holiday occasion like Thanksgiving, Christmas, and Easter. You can serve this recipe with a bowl of delicious chili. Serve it as a side at a BBQ. It's also great for a potluck or tailgate football party as it feeds a crowd.
CAN I USE PREMADE GLUTEN-FREE CORN MIX?
Yes, you can. Use Bob Mills Gluten-Free Corn Muffin Mix and omit the gluten-free flour, gluten-free cornmeal, and baking powder. I have not tried this, so I cannot give exact quantities.
HOW DO YOU STORE GF CORN CASSEROLE?
Store it in an airtight container in the refrigerator for 3-4 days.
CAN YOU FREEZE GLUTEN-FREE CORN CASSEROLE?
Yes, you can freeze it. Wrap them in individual portions or place them in an airtight container for 3 months.
CAN YOU MAKE GLUTEN-FREE CORN CASSEROLE AHEAD OF TIME?
You can, but it's best served freshly baked from the oven. If you want to make it ahead prepare the batter and place it in the casserole dish on the day, you're going to make it so all you need to do is place it in the oven when it's free. Alternatively, make it in advance and freeze it and then warm it up on the day you plan to serve it.
WHAT CAN I SUBSTITUTE TO MAKE THIS DAIRY-FREE, VEGAN OR EGG-FREE?
Dairy-Free - Use Earth Balance Vegan Buttery Sticks, dairy-free cheese, and a brand of dairy-free sour cream.
Egg-Free - You can omit the eggs; the texture, however, will be different.
Vegan - Follow the dairy-free and egg-free options above.

- 2 tbsp brown sugar
- 2 tsp baking powder
- ⅓ cup grated cheese
- 1 cup frozen corn
- ½ cup sour cream
- 2 eggs
- ⅓ cup of butter
- salt
