I love the versatility that these gluten-free zucchini fritters can be served as a great snack, appetizer, side dish, and even a main dish.
When we have an abundance of zucchini, we really love making all manner of recipes available to us. The wonderful thing about this recipe is that you are getting in some much-needed veggies for the kids. They somehow don't even realize that they are eating veggies. This recipe is so good, plus a great dipping sauce is always a winning recipe for kids.

INGREDIENTS IN GLUTEN-FREE ZUCCHINI FRITTERS
Zucchini - 4 zucchinis shredded.
Shallot - 1 shallot, thinly sliced.
Chives - 1 tbsp chives, plus more for serving.
Flour - ⅔ cups All-Purpose gluten-free flour. You could also use chickpea flour or almond flour.
Seasoning - 1 tsp garlic powder, 1 tsp salt and 1 tsp black pepper.
Eggs - 2 eggs at room temperature and beaten. This binds the batter together.
Oil - 2 -4 tbsp avocado oil, for frying.
Sour Cream - Serve these gluten-free zucchini pancakes with sour cream.
EQUIPMENT NEEDED FOR THIS GLUTEN-FREE ZUCCHINI FRITTERS
Cheesecloth - Use cheesecloth to strain the excess water from the zucchini. You can also use a kitchen towel.
Skillet - I like to use a non-stick skillet.
Box grater - You can use a box grater to shred the zucchini or if you have a food processor, that works a treat!
Mixing bowls - These Pyrex mixing bowls come in 3 sizes.
Cookie scoop - Use a cookie scoop so you get the right portions. This is optional.

HOW TO MAKE GLUTEN-FREE ZUCCHINI FRITTERS
- Shred the zucchini and wrap it in a cheesecloth or towel. Squeeze out the juice and let them sit for 10 minutes.
- In a large mixing bowl combine the zucchini, shallot, and chives. Toss to combine and mix them together.
- Add the flour, garlic powder, salt, and pepper. Toss to combine one more time and add the egg. Stir to combine everything. You should have a dough-like consistency.
- Form balls and flatten them between your palms to make small patties. TIP: You can use a cookie scoop.
- Heat a large skillet over medium heat and add the oil. Add the patties and cook for about 5 minutes on each side when the oil is hot but not smoking. Work in batches so you don’t overfill the pan.
- Remove the patties from the pan and transfer them to a plate lined with a paper towel.
- Serve with sour cream and chives.

TIPS FOR MAKING THE BEST GF ZUCCHINI FRITTERS
Remove the excess liquid - The zucchini has a lot of liquid in it once grated. Use a cheesecloth or kitchen towel to remove the excess liquid. You can also add salt to the zucchini, let it sit for 15 minutes and then it draws the liquid out too.
Use a cookie scoop - The cookie scoop helps you to get the same portions and sizes.
Don't overcrowd the pan - I like to cook them in batches to maintain the pan's temperature.
Let the pan and oil heat up - Make sure your pan and oil are at the correct temperature. It will sizzle when you drop the zucchini batter into the pan.
