GLUTEN-FREE BAGUETTE RECIPE
When gluten-free products were not so readily available I am sure you remember the crumbly and expensive store-bought gluten-free bread. It did not nearly resemble normal bread and, let's be honest, was pretty depressing as an alternative.
I have worked hard on this recipe, and I must say I am happy with the outcome. It is tasty, soft on the inside, with the perfect crust on the outside.

Simple ingredients - Most ingredients are pantry staples, so you'll have most on hand.
INGREDIENTS IN GLUTEN-FREE BAGUETTE
Flour - Use gluten-free bread flour. I've used Bob's Red Mill gluten-free flour.
Xanthan Gum - Omit if it’s listed in the ingredients list of the flour you are using.
Tapioca starch / flour - 56 g Tapioca starch/flour
Yeast - Use active dry yeast.
Salt - I like to control my salt intake.
Water - Use 11 oz of warm water to activate the yeast.
Egg - Use egg whites only.
Honey - Always use decent quality honey.
Butter - Use unsalted butter at room temperature.
Vinegar - I used apple cider vinegar.
EQUIPMENT NEEDED FOR THIS GLUTEN-FREE BAGUETTE
Mixing bowls - These Pyrex mixing bowls come in handy.
Stand-up Mixer - Use a stand mixer to make the dough mix nicely.
Baguette Pan - You will need a specific baguette pan for this recipe.

HOW TO MAKE GLUTEN-FREE BAGUETTE
- In a mixing bowl combine the water, honey, and active dry yeast. Let the yeast bloom by letting it sit for 5-10 minutes in the warmest part of your kitchen. It is ready when it starts bubbling.
- In the mixing bowl of the stand mixer combine the bread flour, xanthan gum, tapioca starch, and salt. Stir to combine.
- Add the yeast mixture and turn the mixer on medium speed to knit the dough.
- While the mixer is kneading add the butter, egg whites, and apple cider vinegar. Continue mixing the dough until it all comes together in a ball.
- Transfer the dough to a clean bowl and cover it with plastic wrap and a kitchen towel. Place in a cold oven with the light on. Close the oven door and let it rest for 4-8 hours. It needs to double in size.
- When doubled in size, roll out the dough to a lightly floured surface and cut it into 3 equal parts. Roll each part into a large 10” coil and transfer it to the baguette mold. Repeat with the remaining dough.
- Cover the baguette molds with plastic wrap and a kitchen towel and let it rest for a few hours just like in step 5.
- Remove the plastic wrap and kitchen towel and slice diagonally several times on top of the baguette.
- Preheat the oven to 350 F and bake for about 40 minutes. You know it is done when you insert a toothpick in the center, and it comes out clean.
- Remove from the oven and transfer the baguettes to a cooling rack.

HOW DO I STORE GLUTEN-FREE BAGUETTES?
You can store it in a container in a cotton dish towel for just under 3 days.
CAN I FREEZE GLUTEN-FREE BAGUETTE, AND HOW DO I REHEAT IT?
Yes, you can freeze your baguette loaf for just under 3 months. When ready to enjoy it, defrost it and place it in the oven for 5-10 minutes at 400 degrees F.
CAN YOU MAKE THIS GLUTEN-FREE BAGUETTE AHEAD OF TIME?
Yes, if you're going to consume it within 3 days then make it and store it at room temperature. If you need a longer period, freeze it.
TIPS FOR MAKING THE BEST GLUTEN-FREE BAGUETTE
How to make it crispy - Make sure to bake at the elevated temperature as directed in the recipe card. You can also make a water bath for the 1st 10 minutes of the baking time.
How to make the dough rise - Be sure to let the dough rise twice as per the recipe card.
WHAT SUBSTITUTIONS CAN I MAKE IN THIS GLUTEN-FREE BAGUETTE RECIPE?
Vegan - Try an egg replacer, use maple syrup instead of honey, and vegan butter. Let me know once you try it.
Dairy-free - Use vegan butter brand.
Egg-free - You can use an egg replacer. I have not tried it yet.
WHAT IS THE DIFFERENCE BETWEEN BAGUETTE AND FRENCH BREAD?
French bread is softer and often longer than a baguette.
HOW DO YOU SHAPE AND BAKE GLUTEN-FREE BAGUETTES?
Pat and roll the dough into a rectangle. Then fold both of the long sides toward the center, then doubling the rectangle on itself. This is how it is classically shaped.
WHAT CAN I EAT WITH GLUTEN-FREE FRENCH BREAD/BAGUETTE?
Traditionally baguette is broken off the loaf by hand and dipped in coffee. You can however slice it up and add on jam, other toppings or else use it on a Charcuterie board.
