Use any peaches - You can use fresh, canned, or frozen peaches to make this gluten-free peach cobbler so you can enjoy this dessert all year long. The only difference is that the peaches will be softer if you use canned peaches versus fresh or frozen peaches. That's because the peaches were heated during processing and canning.
INGREDIENTS IN GLUTEN-FREE PEACH COBBLER
FOR THE FILLING:
Peaches - 5 cups fresh or frozen peach slices.
Sugar - ½ cup sugar.
Cornstarch - 2 tablespoons of cornstarch.
Lemon - 1 tablespoon lemon juice.
FOR THE COBBLER TOPPING:
Flour - 1 cup all-purpose gluten-free flour (my blend or Bob's Red Mill 1-to-1). Use a blend that has Xanthan gum or else you will need to add it in.
Sugar - 2 tablespoons granulated sugar and 2 tablespoons brown sugar.
Baking powder - 1 teaspoon gluten-free baking powder.
Shortening - 3 tablespoons shortening.
Egg- 1 large egg at room temperature.
Milk - 4 tablespoons milk (or dairy-free milk).
EQUIPMENT NEEDED FOR THIS GLUTEN-FREE PEACH COBBLER
Baking dish - 9x9 inch glass baking dish works well for all your gluten-free baking needs.
Saucepan - Use a medium saucepan.
Dough blender - Use a dough blender to cut in the shortening. You can also use two forks.
Mixing bowls - These Pyrex mixing bowls come in handy. I use them every time I bake.

HOW TO MAKE GLUTEN-FREE PEACH COBBLER
HOW TO MAKE THE FILLING:
- In a medium saucepan, combine the peaches, sugar, cornstarch, and lemon juice.
- Bring to a boil and then continue to boil for 2 more minutes. This will help the peach filling thicken.
- Remove the saucepan from the heat and pour the peach mixture into a 9x9 pan.
HOW TO MAKE THE TOPPING:
- Add the flour, sugar, brown sugar, and baking powder to a medium mixing bowl and stir until combined.
- Add in the shortening. Using two forks or a pastry blender, cut in the shortening until it is crumbly.
- Mix the egg and milk. Add it to the dry ingredients.
- Stir just until combined.
- Drop topping by tablespoonfuls onto filling. If desired, press the dough down to make it flat. Bake as directed.

TIPS FOR MAKING THE BEST GLUTEN-FREE PEACH COBBLER
Filling must not be runny - Make sure the filling is not too runny. If it is too runny, the topping will not hold up.
Use ripe peaches - If your peaches are not ripe the cobbler will come out gooey.
Cobbler filling did not thicken - Ensure the peaches are coated by the filling ingredients.
HOW TO BLANCH PEACHES FOR EASY PEELING
- Boil a pot of water. TIP: Make sure you have enough water to cover the peaches
- Place the peaches in boiling water for roughly 30 seconds.
- Take the peaches out of the pot and place them in a bowl of ice water.
- Peel them easily.
WHAT IS THE DIFFERENCE BETWEEN A CRISP AND A COBBLER?
Cobblers have a biscuit like topping whereas crisps have more of a streusel type layer on top. You can use different fruits to make a variety of fruit cobbler recipes.
SERVING TIPS
Ice-cream - You can serve this GF peach cobbler with your favorite vanilla ice cream, or dairy-free vanilla ice cream.
Cream - You can also add some whipped cream on top of the GF peach cobbler.
WORKING WITH GLUTEN-FREE FLOURS
When working with or measuring gluten-free flour, spoon the flour into the measuring cup and level. Do not scoop your measuring cup into the gluten-free flour. The best method really is to weigh the gluten-free flour, but I don't have the ingredient weights for all my recipes yet.
HOW DO YOU MAKE A GLUTEN-FREE AND DAIRY-FREE PEACH COBBLER?
To make this gluten-free peach cobbler dairy-free, simply replace the milk in the cobbler topping with your favorite dairy-free milk. We've used almond milk and flax milk.
WHAT CAN I USE AS A CORNSTARCH SUBSTITUTE?
If you can't have cornstarch, or you've run out, you can also use arrowroot to make the peach cobbler filling.
WHAT GLUTEN-FREE FLOURS CAN I USE?
You can use my personal gluten-free flour blend (#1 or #2 - it uses rice flour) or Bob’s Red Mill 1-to-1 Gluten-Free Flour Blend (not the all-purpose) in this recipe.
Most blends that have a combination of flours and starches work well in this recipe. Just note the texture will be different from blend to blend.
HOW DO I STORE GF PEACH COBBLER?
You can store your leftover cobbler for up to 24 hours at room temperature or in the refrigerator. This peach cobbler is best enjoyed the day it is made due to the biscuit topping softening. Serve warmly.
