Gluten Free Skillet Cookie
I know what you might be thinking, that this is a HUGE gluten free skillet cookie. It is. We usually make it and eat off of it for days, or we make it when we have guests over. It's incredible and if you can't do dairy, I've included a dairy-free option for you.
This post includes step-by-step instructions and substitution solutions for making the best gluten free chocolate chip skillet cookie.
Smaller Skillet Cookie
If you don't want to make this large of a skillet cookie, I have a couple of options for you. You can cut this gf skillet cookie recipe in half and bake it in a smaller 8-inch or 9-inch cast iron skillet, or you can make the entire recipe and freeze half of the dough.
For even smaller skillet cookies, divide the dough into smaller cast iron skillets and watch the baking time for doneness.
How to make a gluten free skillet cookie
- In a large mixing bowl with an electric mixer, cream together the butter, sugars, and vanilla.
- Add in the eggs and beat until combined.
- In a separate medium mixing bowl, whisk together the flour, baking powder, and salt.
- Add the flour mixture to the wet ingredients.
- Mix just until the dough comes together.
- Add the chocolate chips and mix until they are well incorporated.
- Spoon the dough into your prepared cast iron skillet.
- Bake for 30 to 35 minutes or until the center is almost done cooking.

Working with Gluten-Free Flours
When working with or measuring gluten-free flour, spoon the flour into the measuring cup and level. Do not scoop your measuring cup into the gluten-free flour. The best method really is to weigh the gluten-free flour but I don't have the ingredient weights for all my recipes yet.
Dairy-Free Option
To make this skillet cookie dairy-free, simply replace the butter with your favorite dairy-free butter, and use dairy-free chocolate chips.
Gluten-Free Flours
You can use my personal gluten free flour blend (#1 or #2) or Bob’s Red Mill 1-to-1 Gluten-Free Flour Blend (not the all-purpose) in this gluten free chocolate chip skillet cookie recipe. Most blends that have a combination of flours and starches work well in this recipe. Just note the texture will be different from blend to blend.
Storing Skillet Cookies
You can store this gluten free skillet cookie at room temperature. Cover it with foil and it will last up to 3 days. If desired, you can remove the skillet cookie and transfer it to a airtight container.

Gluten Free Chocolate Chip Skillet Cookie

Ingredients
- 1 cup (2 sticks) unsalted butter, at room temp, plus more for greasing skillet
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 3 large eggs
- 2 teaspoons gluten free vanilla extract
- 3 cups all-purpose flour (I use my blend or Bob's Red Mill 1-to-1 Gluten Free Baking Flour)
- ½ teaspoon salt (omit if using salted butter)
- 1 Tablespoon baking powder
- 2 cups gluten-free semisweet chocolate chips or chocolate chunks
Instructions
- Preheat the oven to 350°F. Grease a 12-inch cast iron skillet with butter; set aside.
- In a large mixing bowl with an electric mixer, cream together the butter, sugars, and vanilla.
- Add in the eggs and beat until combined.
- In a separate medium mixing bowl, whisk together the flour, baking powder, and salt.
- Add the flour mixture to the wet ingredients and mix just until the dough comes together.
- Add the chocolate chips and mix until they are well incorporated.
- Spoon the dough into your prepared cast iron skillet and spread until the pan is covered.
- Bake for 30 to 35 minutes or until the center is almost done cooking.
- Remove from the oven and let cool for 30 minutes before serving.

Is the cast iron skillet a requirement for success? I have a brand-new 12-inch oven-proof non-stick skillet. And a heavy-duty cuisinart 12-inch straight-sided skillet. Just wondered if you had tried it in anything else. My 8-inch cast iron skillet has a lot of seasoning that might clash with a sweet cookie.

Hi Diane,
I haven't tried it in a non stick oven safe skillet, but it should work fine. Just keep an eye on the cooking time. It might take a bit longer to cook since the cast iron skillet tends to heat differently. I recommend not using a seasoned pan if possible.
