- In a large mixing bowl beat together butter and sugars until smooth and creamy.
- Add egg, egg yolk, and vanilla.
- Mix for 1-2 minutes, letting the ingredients come together.
- In a separate medium mixing bowl, whisk rice flour, millet flour, tapioca flour, potato starch, xanthan gum, baking soda, and salt. Add dry ingredients to wet ingredients.
- Mix until combined.
- Add chocolate chips.
- Stir in chocolate chips until they are well incorporated.
- Drop dough by measured tablespoonful, two inches apart, onto the baking sheet and bake as directed.

Tips for making the best gluten free chocolate chip cookies
- Start with room temperature ingredients.
- Make sure your butter is soft, not melted.
- Spoon flours into the measuring cup and level, don’t scoop the flour from the bag. I’ve included weight measurements for those who prefer to weigh the gluten free flours.
