- Add the oat flour, baking soda (not baking powder), and salt to a medium mixing bowl and whisk until combined.

Ingredients
- 2 cups (180g.) oat flour (if you are using measuring cups, whisk the flour then spoon it into the measuring cup)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup oil of choice (or melted and cooled butter)
- ½ cup pure maple syrup (or granulated sugar)
- 2 teaspoons vanilla extract
- 3 eggs, room temperature
- ½ cup chocolate chips (or more if you like)
Instructions
- Preheat oven to 350°F (180°C). Line a cupcake pan with 12 paper liners; set aside.
- Add the oat flour, baking soda, and salt to a medium mixing bowl and whisk until combined.
- In a separate large mixing bowl, combine the oil (or butter), maple syrup (or sugar), eggs, and vanilla.
- Add the dry ingredients to the wet ingredients. Mix just until combined. Don't overmix.
- Add the chocolate chips. Stir just until they are evenly incorporated into the batter.
- Let the batter rest for 5-10 minutes.
- Spoon batter evenly into the paper liners.
- Bake for 18 minutes or until the centers are set. Don't overbake.
- Remove from the oven and cool before serving.
- Store in an airtight container for up to 3 days.
Notes
- These muffins dry out quickly. They are best enjoyed within a couple of days.
