How to Make Paleo Waffles
- In a large bowl, mix almond flour, coconut flour, tapioca flour, baking soda, baking powder, and salt. Mix until well combined.
- In another bowl, mix almond milk, coconut oil, vanilla extract, and egg yolks. Mix well.
- Pour the egg mixture into the flour mixture. Using an electric mixer, mix them until combined.
- In a mixing bowl, add egg whites and lime juice. Using an electric mixer, mix the egg whites until bubbly, add coconut sugar, and continue mixing until soft peak.
- Mix the egg whites mixture to the waffle batter little by little using the folding method. Use a spatula in this step. The air in the egg whites makes your waffle airier and bubblier.
- Heat your waffle iron, and grease it with coconut oil. Pour ½ cup of batter and let your waffle iron do the work! Once the "ready" button comes on, use kitchen tongs to carefully remove the waffle and place it directly onto a cooling rack for a few minutes before eating.
- Serve paleo waffles with fresh fruit and maple syrup.

I have been baking your gluten free white bread with ground flaxseed meal for my husband and he loves it! I use Bob's 1-1 flour which has some xanthum gum in it. Should I reduce the amount of xanthum gum in your recipe? Usually you note when it should be reduced but this recipe does not. Can you please advise me? Thanks!

This recipe uses almond flour and tapioca flour. You do not need to add xanthan gum to this recipe for waffles.
