These gluten-free pumpkin waffles are perfect for breakfast, brunch, or dessert. They're also the ultimate crowd pleaser.

GLUTEN-FREE PUMPKIN WAFFLES RECIPE
Saturday mornings in our household are sheer joy for our kids. Just the mere mention of these gluten-free pumpkin waffles gets them into a mood of utter joy, followed by a song and dance.
These pumpkin waffles are also great for a Fall brunch for a crowd. You can make them charcuterie style and enjoy the brunch too without being stuck in the kitchen. If you are an avid meal prepper, make a double batch and freeze them for later.

Meal prepping - If you are short on time or have a busy Fall Day planned. You can either prep the batter overnight or make the waffles in advance. Warm them up on the day they're required. They also freeze well, so when the urge strikes or a quick snack is needed, pop them into your toaster to warm up and enjoy.
Minimal clean-up - It's really two bowls, a few measuring tools, and your waffle maker. So perfect for a lazy Saturday morning when you don't want to clean up so many dishes.
Toppings - Yes, toppings. Who doesn't love waffles and the endless number of toppings you can place on them? From fruit, different types of butter, syrups, jams, and more. Here's some of our favorites: bananas, walnuts or pecans, maple syrup, ground cinnamon, nut butter, butter, or powdered sugar.
INGREDIENTS IN GLUTEN-FREE PUMPKIN WAFFLES
Gluten-Free All-Purpose Flour Blend - You can use one of our gluten-free flour blends, or your favorite all-purpose 1:1 style gluten-free flour.
Milk - You can use milk of your choice. To make it dairy-free use plant-based milk like almond, cashew, or coconut milk.
Pumpkin and pumpkin spice - Use canned pumpkin, not pumpkin pie filling. Use store-bought pumpkin spice or if you prefer you can make your own homemade pumpkin pie spice.
Xanthan gum - Xanthan gum is a sugar derived from corn. Some gluten-free flour has it added in already. So, check the ingredient label, and only add it if needed.
Eggs - 2 eggs at room temperature.
Sugar and Salt - Use granulated sugar. Also called white sugar, or “regular” sugar. I don't recommend brown sugar. You can use your standard table salt.
Oil - We like to use vegetable oil.
Vanilla extract - This adds a nice flavor to the batter, so use a good quality extract.
Baking powder - Make sure it's gluten-free and don't miss this ingredient as it's key to fluffy and light pumpkin waffles.
EQUIPMENT NEEDED
You need a good waffle maker. But you have two choices (I love choices!). You can select a mini waffle maker or the standard size waffle maker. This all depends on your family and the intended use.
They also come in tons of different shapes, but I would suggest foregoing cutesy for functionality. Make sure it's non-stick, easy to clean (you need to get into all those grooves, if you add too much batter) and the size you will use the most.

HOW TO MAKE GLUTEN-FREE PUMPKIN WAFFLES
- In a large bowl combine the wet ingredients, pumpkin, milk, oil, eggs, and vanilla extract.
- In another bowl combine all your dry ingredients; flour, sugar, pumpkin pie spice, baking powder, xanthan gum (if using), and salt.
- Add the wet ingredients into the dry ingredients and mix until well combined and you have a thick waffle batter.
- Heat up a waffle iron and spray it with some cooking spray. Add 3/4 of a cup of batter into your waffle maker. TIP: Use a measuring cup to get the correct amount of batter for your waffle maker.
- Cook your waffles according to the waffle maker's instructions. It should be somewhere around 3-4 minutes.
- Check your waffles to see if they're ready, if not then cook for one more minute or so. Repeat with the rest of the batter.
TIP: Usually when the steam is no longer present, they're ready! But check your waffle maker's manual. - Serve your pumpkin waffles with some maple syrup, crushed pecans, and a pat of butter.

HOW DO YOU STORE GLUTEN-FREE PUMPKIN WAFFLES?
Allow the pumpkin waffles to cool. Freeze them in batches or individually wrapped in airtight containers for up to 3 months.
TIPS FOR PERFECT GLUTEN-FREE PUMPKIN WAFFLES
Use a measuring cup so they are uniform in shape, and you'll get the perfect amount for your waffle iron without it seeping out. No more added clean up.
Spray the waffle iron with cooking spray of your choice (check your manual). This helps the batter to not stick to the waffle maker.

Gluten-Free Pumpkin Waffles

Ingredients
- 1 can (15oz) canned pumpkin - not pumpkin pie filling
- ½ cup milk of choice
- ¼ cup vegetable oil
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose gluten-free flour
- ½ cup sugar
- 2 teaspoons pumpkin pie spice
- 2 teaspoons baking powder
- ½ teaspoon xanthan gum (omit if your flour blend contains it)
- ¼ teaspoon salt
Instructions
- In a large bowl combine all your dry ingredients; flour, sugar, pumpkin pie spice, baking powder, xanthan gum (if using), and salt. In another bowl combine the wet ingredients, pumpkin, milk, oil, eggs, and vanilla extract.
- Add the wet ingredients into the dry ingredients and mix until well combined and you have a thick waffle batter.
- Heat up a waffle iron and spray it with some cooking spray. Add ¾ of a cup of batter into your waffle maker and cook your waffles according to the waffle maker's instructions. It should be somewhere around 3-4 minutes. Check your waffles to see if they're ready, if not then cook for one more minute or so. Repeat with the rest of the batter.
- Serve warm drizzle with some maple syrup, crushed pecans, and a pat of butter, and enjoy!
Notes
- You can use a classic waffle maker or a mini one (using ⅓ cup batter per waffle). The cooking time will decrease if using a mini waffle maker. You can also turn this batter into pancakes if you don’t have a waffle maker.
- To make this recipe dairy free, use any plant-based milk of choice.
- Make sure you spray your waffle maker with cooking spray in between each waffle to prevent them from sticking.
- You can freeze these waffles for later and reheat them when you are ready to enjoy them. Simply allow the waffles to cool down completely and store them in a freezer-friendly zip-lock bag.
