Ingredients to Use for Quiche Bites
My gluten-free quiche bites recipe calls for only a handful of ingredients. And it's versatile enough to cater to different tastes. I'll list the must-haves first. Then, I'll show a few options on how to (literally) spice them up.
Must Have Mini Quiche Ingredients
- A Loaf of Gluten-Free Bread
- Olive Oil
- Eggs
- Salt and Pepper
- Shredded Cheese
Note that I've just said "eggs" here. I prefer to cook with a large egg, and this recipe calls for six of them. I've also called for "shredded cheese" instead of a specific kind. I like to make mine with a mix of cheddar cheese and swiss cheese. They're also spectacular with goat cheese crumbles or sheep's feta cheese (which is also a crumble).
Optional Ingredients for Extra Special Quiche Bites
- Ham
- Bacon crumbles
- Bell Pepper
- Jalapeno peppers
You'll notice some common ingredients missing from this recipe. Some mini quiche recipes call for heavy cream. I prefer eggs and cheese instead.
Equipment Needed For This Recipe
- Rolling pin
- Whisk
- Mixing bowl
- Mini muffin tins
- (optional) Cookie cutter
Note that you don't need mini muffin cups for the tins. The flattened bread serves that purpose. If you want to save time, use a large cookie cutter or biscuit cutter (2") to cut circles out of the flattened bread.
Tips For Making Memorable Quiche Bites
The best part of my gluten-free quiche bite recipe is its simplicity. Eggs, oil, bread, cheese, and seasonings. So keep it simple.

How long do they keep? I prefer to eat these fresh, on the same day they're made. You can store them in the refrigerator for up to two days.
This recipe makes enough for 24 mini quiche bites. That's enough for baby showers, potluck brunches, or family picnics (my favorite!).
Some readers ask if you should serve gluten-free quiche bites warm or cold. I prefer to serve them warm. They can be served cold, but I'd only serve them that way to anyone who also likes cold pizza.

You don't have to spend hours in the kitchen making a gluten-free quiche with a chewy, delicious crust - you can flatten bread slices with a rolling pin and cut circles out of the bread to make mini quiches like these Gluten-Free Quiche Bites.
You can use a fresh loaf, or a loaf that's been on your shelf for a while for these gluten-free quiche bites. Simply spray a mini muffin pan with olive oil and place your bread-circles into each muffin well. When the quiche bakes, the bottom of the bread crisps up.
If you like your quiche crust extra firm, bake the bread circles in the pan for 8-10 minutes before adding your eggs and toppings.

Gluten-Free Quiche Bites
These bite-sized breakfast quiches are ready in less than 20 minutes and make the perfect addition to any breakfast.
Ingredients
- 1 loaf Schar Artisan Baker 10 Grains & Seeds Bread
- Olive oil (I use it in an oil mister)
- 6 eggs
- Salt and Pepper to taste
- ½ cup ham, diced
- ½ cup shredded cheese
Instructions
- Preheat oven to 375 F.
- Using a rolling pin, flatted each slice of bread.
- Cut three 2-inch circles out of each flatten slice of bread (I used a 2-inch biscuit cutter). Save heals and extra bread for croutons.
- Press 12 bread circles into two 12-serving mini muffin tins.
- In a medium mixing bowl, whisk eggs, salt, and pepper.
- Add a tablespoon of whisked eggs to each muffing tin.
- Top with diced ham and cheese (or your favorite toppings).
- Bake for 10-12 minutes, or until cooked through.
- Serve warm.

Hi, im having a problem with this recipe. Same ingredients and prep and the eggs are just soaking into the bread instead of staying cupped in it.

The only thing I can think of is that not all breads have the same density. Next time, let your bread sit out, or toast it, to dry it out and crisp it up a little.
