Gluten Free Mini Quiche
If you've ever made a gluten-free quiche from scratch you know that the crust takes some time to pull together. I love making homemade pie crust and using it for quiche, but what I love even more is making the gluten-free quiche crust out of bread when I'm in a pinch for time.
These Gluten-Free Quiche Bites are ready in no time and they need minimal clean up. You can add your favorite quiche ingredients, and top them with your preferred condiments. They are the perfect little gluten-free quiches.
Gluten-Free Quiche Recipe
For this recipe I used Schar Artisan Baker 10 Grains & Seeds Bread. It makes a wonderful, hearty crust, and using this bread helps me sneak more fiber into my family's diet without them knowing. I first used this bread for crust in my Gluten-Free Spinach Artichoke Bites recipe, and ever since then, I've loved incorporating it into other recipes.
You don't have to spend hours in the kitchen making a gluten-free quiche with a chewy, delicious crust - you can flatten bread slices with a rolling pin and cut circles out of the bread to make mini quiches like these Gluten-Free Quiche Bites.
You can use a fresh loaf, or a loaf that's been on your shelf for a while for these gluten-free quiche bites. Simply spray a mini muffin pan with olive oil and place your bread-circles into each muffin well. When the quiche bakes, the bottom of the bread crisps up.
If you like your quiche crust extra firm, bake the bread circles in the pan for 8-10 minutes before adding your eggs and toppings.

Gluten-Free Quiche Bites
These bite-sized breakfast quiches are ready in less than 20 minutes and make the perfect addition to any breakfast.
Ingredients
- 1 loaf Schar Artisan Baker 10 Grains & Seeds Bread
- Olive oil (I use it in an oil mister)
- 6 eggs
- Salt and Pepper to taste
- ½ cup ham, diced
- ½ cup shredded cheese
Instructions
- Preheat oven to 375 F.
- Using a rolling pin, flatted each slice of bread.
- Cut three 2-inch circles out of each flatten slice of bread (I used a 2-inch biscuit cutter). Save heals and extra bread for croutons.
- Press 12 bread circles into two 12-serving mini muffin tins.
- In a medium mixing bowl, whisk eggs, salt, and pepper.
- Add a tablespoon of whisked eggs to each muffing tin.
- Top with diced ham and cheese (or your favorite toppings).
- Bake for 10-12 minutes, or until cooked through.
- Serve warm.

Hi, im having a problem with this recipe. Same ingredients and prep and the eggs are just soaking into the bread instead of staying cupped in it.

The only thing I can think of is that not all breads have the same density. Next time, let your bread sit out, or toast it, to dry it out and crisp it up a little.
