Gluten-free roti is like peanut butter and jam, you can't have one without the other. You can't have curry without a roti. So, this is something I have craved for countless months. And guess what! GF roti is really so easy to make, and now you can make them too!
I love to dip my roti in a good butter chicken. Truth be told I make sure my curry has additional sauce just so I can dip my roti into it.
Follow along for my step-by-step guide to GF roti success. No more having takeout curry without your favorite flatbread. I even have these frozen, so if we do have a curry takeout, I can have one with it. That is how much I love a good gluten-free roti.

Ingredients in Gluten-free Roti
Flour - I've used a combination of chickpea flour, cassava flour and gluten-free 1-to-1 baking flour.
Xanthan gum - 1 tsp xanthan gum.
Salt - ½ tsp fine sea salt.
Baking powder - 2 tsp gluten-free baking powder.
Oil - 2 tablespoons of olive oil.
Water - 2 ½ cups hot water.
Equipment Needed for This Gluten-free Roti
Mixing bowls - These Pyrex mixing bowls are great to use in the kitchen.
Rolling pin - I use the traditional wooden rolling pin, but you can choose other types of rolling pins.
Whisk - I like to use a stainless-steel whisk. You can also use a wooden spoon.
Cast iron grill pan - You can use a cast iron grill pan.

How to Make Gluten-free Roti
- Place all of the dry ingredients in a medium-sized bowl; chickpea flour, cassava flour, gluten-free 1:1 baking flour, xanthan gum, fine sea salt, and gluten-free baking powder. Mix well using a whisk or wooden spoon.
- Add olive oil. Pour hot water a little at a time. Mix well using a wooden spoon until you can form it into a dough ball. We don't need to use all the water. The dough should be soft and firm but not too sticky.
- Slice the dough into 6 quarters then roll each piece into a small ball then cover the bowl with a damp cloth.
- On the floured flat surface, lay 1 of the dough ball and start to roll it until really thin. Make them as round as you can.
- Once you have rolled and shaped all the dough, heat the cast iron grill pan until hot.
- Place a shaped roti dough onto the hot pan and leave to cook until you just start to see bumps appearing on the surface. Now flip the flatbread using a silicone spatula.
- Using a clean kitchen towel, press down very lightly for a few seconds to help the inside cook quickly, and then allow the bread to cook. After a few times, the roti starts to puff up. Then take it off from heat and let the bubble deflate naturally after removing it from the heat.
- Enjoy it with chicken curry while hot.

Correct water temperature - Make sure your water is warm. This helps in developing the dough.
Dough mustn't be sticky - The gluten-free roti dough needs to be soft and not sticky.

Oil - You can try another oil. I would suggest sunflower oil, canola oil or rapeseed oil. I would not suggest coconut oil.
Flour - I would not suggest changing the flour blend.
Why Won't My Roti Puff Up?
Make sure your pan is hot enough. Also ensure you roll the GF roti thin enough.
Which Gluten-Free Flour Is Best For Roti?
I've used a combination of chickpea flour, cassava flour and gluten-free 1-to-1 baking flour. I feel this makes the best combination as the GF roti comes out perfectly.

I have not recipe-tested these but suggested substitutions are psyllium husk or cornstarch. Let us know if you test it!
