The busiest holiday cooks know a simple truth: the less you’re doing on the big day, the more you can actually enjoy it. Gluten-free hosts, especially, don’t need the extra stress of last-minute casseroles, sides, and pies that might not turn out. The good news is that many of the best Thanksgiving and Christmas dishes actually taste better when they’re made ahead.

Every recipe here is gluten-free and designed to be prepped in advance. We sometimes assemble a casserole the night before, bake pies a day or two early, or stash a cozy pot pie in the freezer for post-holiday leftovers.

A collage of gluten-free green bean casserole, stuffing, and pumpkin pie.

We are including crowd-pleasing side dishes, make-ahead brunch ideas, and classic pies. The goal is help you spread the work across 1–3 days instead of cramming it all into one.

    Make-Ahead Gluten-Free Thanksgiving & Christmas Dishes

    Gluten-Free Pumpkin Pie

No Thanksgiving dessert table feels complete without pumpkin pie. This gluten-free pumpkin pie has a silky spiced filling and a flaky crust that holds up perfectly in the fridge. Bake it 1–2 days ahead, chill, and serve straight from the refrigerator with whipped cream. I'm not alone when I say from experience that pumpkin pie slices better and tastes deeper after a night of rest.

    Gluten-Free Pecan Pie

Sticky, caramelly filling and toasted pecans make this gluten-free pecan pie a holiday showstopper. Like most pies, it’s an ideal make-ahead dessert: bake it a day or two before, let it cool completely, and store at room temperature or chilled. The filling sets as it rests, so you get cleaner slices and richer flavor by the time guests arrive.

This classic gluten-free apple pie layers tart apples, warm spices, and a golden, flaky crust. It’s built for make-ahead baking: you can bake it and keep it at room temperature or in the fridge for several days, or freeze it baked or unbaked for up to three months. That makes it a smart dessert to prep well before your holiday guests walk in the door.

Gluten-free sweet potato casserole and gluten free corn casserole, both served on plates for Thanksgiving.

    Gluten-Free Sweet Potato Casserole

Creamy, spiced sweet potatoes with a crunchy pecan topping make this gluten-free sweet potato casserole a must-have at both Thanksgiving and Christmas. You can prep the sweet potato layer up to three days ahead, keep it in the baking dish, and add the crumble topping just before baking, so it comes to the table hot and fresh without any last-minute stress.

    Gluten-Free Corn Casserole

Juicy corn baked into a soft, custardy center with a golden top makes this gluten-free corn casserole pure comfort food. It’s ideal for making earlier in the day or the day before. Bake, cool, cover, and rewarm in the oven until heated through. It stays moist and tender, so nobody will know it was made ahead.

    Gluten-Free Green Bean Casserole

This gluten-free green bean casserole brings back the classic creamy texture and crunchy topping. And it doesn't require canned soup or gluten. Blanch the green beans and mix the sauce a day ahead, then stash it in the fridge. On the holiday, just top with gluten-free fried onions (or pork rinds) and bake until bubbly and browned.

    Gluten-Free Breakfast Casserole

Planning a big holiday breakfast or brunch? This hearty gluten-free breakfast casserole is loaded with eggs, hash browns, cheese, and your choice of sausage, bacon, or ham. You can assemble it the night before and bake it in the morning, freeing you up to enjoy coffee and presents instead of cooking breakfast from scratch.

    Gluten-Free Mashed Potatoes

These smooth, buttery gluten-free mashed potatoes are a classic side for both Thanksgiving and Christmas. Make them earlier in the day, then keep them warm in a slow cooker or reheat gently with a splash of cream or broth. They stay creamy and comforting, so you’re not mashing potatoes at the last minute.

    Gluten-Free Stuffing

Herby bread cubes, sautéed onions and celery, and plenty of broth turn this gluten-free stuffing into a holiday essential. You can dry the bread cubes days ahead and assemble the stuffing the night before, then bake it on Thanksgiving or Christmas day. Leftovers hold well for up to three days in the fridge, making it easy to stretch the feast.

    Gluten-Free Cornbread Stuffing

If you prefer a slightly sweeter, Southern-style stuffing, this gluten-free cornbread stuffing is rich, savory, and perfect for pairing with turkey and gravy. Bake your cornbread 1–2 days ahead, then cube, toast, and store it. On the big day, you just mix everything together, bake until crisp on top, and serve.

Turkey pot pie and chicken casserole, both with gluten-free ingredients.

    Gluten-Free Chicken Casserole

For a cozy, crowd-pleasing main that works for any night between the holidays, this cheesy gluten-free chicken casserole is packed with veggies, rice, and tender chicken. It’s a great make-ahead and freezer-friendly recipe. Bake one for dinner and freeze another for a future busy night when you still want something warm and comforting.

    Gluten-Free Turkey Pot Pie

Leftover holiday turkey gets new life in this comforting gluten-free turkey pot pie. It uses a flaky gluten-free pie crust and a creamy vegetable filling that freezes beautifully. You can bake it ahead and freeze, or assemble the pie and freeze it unbaked, then reheat or bake straight from the freezer for an easy, from-scratch meal after the big day.

    Gluten-Free Sweet Potato Pie

If you love sweet potato casserole but want something sliceable, this gluten-free sweet potato pie is silky, spiced, and incredibly simple. Make the pie crust and filling a day ahead, bake, then chill until serving time. It’s sturdy enough to travel, too, so it’s perfect when you’re in charge of bringing dessert to a holiday gathering.

Whichever recipes you make, remember proper food storage times. Soups and stews can last about four days in the fridge, or months in the freezer, and the same is true for pies. If you want to prep pumpkin pies for Thanksgiving and Christmas this year, you could do both at once and keep one in the freezer for next month.

With a little planning, these gluten-free casseroles, sides, and pies let you spread the cooking out over several days without sacrificing flavor or texture. Mix and match a few favorites for Thanksgiving, Christmas, and the cozy days in between, and give yourself the gift of actually enjoying your own holiday table.
