Originally posted in May 2014, these tender little sweets were titled Gluten-Free Perfect Pistachio Petits (you can still see the name in the title). They were popular for Mother’s Day, Bridal Showers, and Baby Showers.
I’ve recently given the photos a refresh, and updated the recipe – fine tuning it even further. I didn’t realize how important recipe names were for searching, so I’ve also updated to title to make them easier to find.
These mini Gluten-Free Pistachio Cupcakes topped with dairy-free vanilla buttercream frosting, are a true delight. With a tender sponge-like texture, and delectable frosting, they will surely be love at first bite.
This recipe only requires two bowls to prep and 10-12 minutes to bake, making them easy to whip up and serve at your next tea party or spring fling.

I’m so pleased with popping these yummy cupcakes in my mouth one at a time, that I haven’t really though about what they’d be like baked into a regular cupcake size.
Cupcakes are pretty simple to make. There are a few tips that I like to keep in mind when making cupcakes of all shapes, and sizes.
- First, you have to follow the recipe. So many people comment on recipe posts saying that they made a ton of substitutions and the recipe didn’t turn out. If you use substitutions, you are doing so at your own risk.
- Second, you want to mix at the right time and not over-mix. The longer you mix your batter, the more stiff your batter will become.
Easy, right? You’d be surprised at how many people don’t follow a recipe.
