I’ve been trying to think of some new higher protein breakfast items that my picky-eater-kids will eat in the morning before school. They tend to lose steam around 10:00 am if they don’t have enough healthy fat or protein in the mornings (like most people). Both my girls are big fans of muffins and breakfast cakes – which are easy and quick – but muffins tend to fall short on protein unless I use almond flour. Unfortunately my girls aren’t fans of almond flour. They take a bite or two and instantly ask me what I used to make the muffins (sigh). They know. They can tell. They don’t like texture. Bummer!
So how can I get more fat and protein into their favorite breakfast food? Nut butters! That’s how. Nut butters are usually high in fat and protein (if you don’t water them down with all that other processed stuff), they have the same full flavors as some of the nut flours, and they provide a smoother texture.
This naturally grain-free, gluten-free, dairy-free Almond Cake uses almond butter as the base and takes about 5 minutes to whip up and around 25 minutes to bake. So in less than 30 minutes you can make this healthy cake. You can enjoy it for breakfast, as a snack, or an after-dinner treat. It’s smooth in texture and has a mild caramel-like sweet flavor.
