My husband and I have been eating less grain lately. We’ve found that beans don’t bother us, but for some reason grain does. If I eat more than a serving of grain I bloat like a balloon at a birthday party.
Beans don’t do that to me – even canned ones. In order to add more protein to our diets, and eat dishes that are grain-free, we’ve started incorporating beans back into our meals.
There are several types of beans in the canned food isle and bulk isle at the grocery store.
If you’re not a fan of white beans (like I use in this Sausage and White Bean Salad recipe) you can switch them out for another soft bean.
We like white beans because they are tender and buttery — and they are a perfect match for olive oil, vinegar, and lemon juice.
Beans are a great way to add different flavors, textures, and proteins to your diet. If your digestive system can’t tolerate beans, you could substitute the beans in this recipe with 3 cups of steamed chopped cauliflower.
I actually did that once when we ran out of beans and I didn’t notice until I had everything else out and prepped. Using cauliflower does not add the protein, but it’s still healthy and adds plenty of flavor.
