I'm seeing tons of pumpkin recipes floating around the internet - which makes me super giddy. I love pumpkin. From sweet to savory, or hot to cold, I can eat almost anything made with pumpkin.
One of the recipes I've seen the most variations for is pumpkin oatmeal. As much as I love oats, I know that not everyone can enjoy them. Whether Celiac, living a grain-free lifestyle, or simply not loving oats, Paleo Pumpkin Porridge might be your newest favorite hot cereal, without oats, of course.
Can I make this without almond flour?
I haven't tried making this with just the coconut flour. This recipe was designed using a combination of the two.
This Paleo Pumpkin Porridge comes together in a flash, and you have options. You can microwave it to heat it up, heat it slowly over the stove-top, or you can mix it and store it up to a day in your refrigerator, and reheat when ready.
The other option you have is to mix all the dry ingredients in a container and wait to add the liquid until you are ready to eat. Think of it as instant hot cereal!
Do you have a more instant option?
If you mix the dry ingredients for this paleo pumpkin porridge in advance you can heat up water until boiling and pour it in and stir. Let it sit for 5 minutes, then enjoy. It's like instant oatmeal without the outs.
This Pumpkin Paleo Porridge is lightly sweetened and bursting with cinnamon and pumpkin pie spices. You can top it with your favorite toppings like cream, coconut cream, maple syrup, and nuts, to name a few.
Can I use honey instead of coconut sugar or maple syrup?
Yes. You can use your sweetener of choice. If you use a low-carb sweetener, start with a half teaspoon and work from there.
What is the carb count is for the recipe?
Right now I am not counting carbs. You are welcome to plug the ingredients you use into a nutrition calculator to calculate carbohydrates.
This paleo pumpkin porridge, also sometimes called paleo pumpkin oatmeal, is probably one of the most simple hot breakfast cereals to make, short of buying the prepackaged grain-free hot cereals from the store. It's also less expensive, and can be made from scratch within minutes. I hope you like it as much as we do!
- ¼ cup + 2 tablespoons almond flour or almond meal
- 2 tablespoons coconut flour
- 2 teaspoons ground flax-seed
- 2 tablespoons coconut sugar or maple syrup, add more for a sweeter cereal
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ½ teaspoon pumpkin pie spice
- ¾ cup water
- ¼ cup full fat coconut milk (or half and half)
- ¼ cup pumpkin puree (not pie filling)
- Put all ingredients into a small sauce pan and whisk until combined.
- Heat over medium heat until hot. Alternatively, place in a microwaveable safe container or bowl. Cover and heat for 30 seconds at a time until heated through.
- Let cool for 5 minutes before serving.
- If desired, top with coconut cream, coconut sugar, maple syrup and/or pecans.
- Serve warm.
