Cheesy potatoes, also known as funeral potatoes, are a super easy potato casserole that feeds a crowd. They are filling, comforting, and you can have them in the oven in five minutes, or by the time the oven is done heating up.
These gluten free cheesy potatoes can be made with cream of chicken soup or cream of mushroom soup. We like to use cream of chicken soup because of the flavors that it adds. If don't eat chicken, feel free to use your favorite creamy soup. Just make sure it's gluten free.

To make this cheesy potato casserole I used a gluten free cream of chicken soup. If you don't need to eat gluten free, feel free to use your favorite brand. These gluten free funeral potatoes are perfect for feeding a crowd and they are inexpensive to make.
What cream of chicken soup is gluten free?
There are a few brands of cream of chicken soup that are gluten free. Here are a few we've tried.

Are hash browns gluten free?
I often get asked are has browns gluten free. Yes, most hash browns are gluten free. Some brands will add wheat to help bind the hash browns. Please always check labels before purchasing.
Can I make this casserole ahead of time and freeze it?
Yes. These gluten free cheesy potatoes are best when made fresh but you can make these funeral potatoes ahead of time and freeze them before baking. Simple pull them out of the freezer 2 hours before baking. Since the hashbrowns are already frozen, it shouldn't change the texture too much.
Are hashbrowns gluten free?
Most brands of hashbrowns are gluten free. Always read labels on hash browns and other frozen potatoes, as some of them do contain flour.
How to make cheesy potatoes?

- In a large mixing bowl, combine sour cream, gluten free cream of chicken soup, 1 cup cheddar cheese, and green onion.
- Add the frozen hashbrowns.
- Mix until combined.
- Spread mixture evenly into the pan.
- Top with remaining cheddar cheese.
- Bake as directed. Serve hot.

I linked to a gluten free cream of cheddar soup recipe but ended up removing it. I haven't found any brands of canned cheddar soup that are gluten free, only from-scratch recipes.

I cannot buy frozen hash browns where I live. Could I use real grated potato? What extra steps would I need to take to get the same taste and texture?

Hi Laura,
To make hash browns from scratch:
-Shred the amount of potatoes called for
- Immediately put the potatoes into a large bowl of cold water and let soak for about 5 minutes. This helps remove some of the extra starch.
- Remove the potatoes from the water onto a clean tea towel and try to get off as much water as possible.
