INSTANT POT FAJITAS RECIPE
If I go to a Mexican restaurant, I always want to order the chicken fajitas. They are so warm and delicious, with a savory and smoky flavor that is irresistible.
I love adding my favorite toppings, and wrapping them up in warm tortillas.
Being gluten free, it's always much safer to create my own version of restaurant dishes at home so I know exactly what goes into them, and so Instant Pot Fajitas was created.
I used this same logic to create my own version of Instant Pot Pepper Steak too.
Making instant pot fajita chicken is much easier than you might think it would be. All of the ingredients cook together at the same time, letting the flavors combine beautifully, and also saving you steps and time.

INGREDIENTS IN INSTANT POT FAJITAS
Olive Oil - This will help keep everything from sticking to the bottom of the pot and add a bit of silky texture.
Lime Juice - Use the juice from one fresh lime.
Ground Cumin - This spice is necessary for all taco style recipes.
Chili Pepper - Adds heat and flavor.
Ground Paprika - Provides a red color and another layer of warm flavor.
Cayenne - For spiciness. Add less of this for milder flavor.
Onion Powder - I use this seasoning in recipes that I want to taste like they were cooked all day.
Garlic Powder - Adds even more flavor to this flavorful dish.
Salt - To properly season the chicken.
Pepper - Another layer of heat for this recipe.
Chicken Broth - I like the extra flavor that broth gives this dish, but you can use water instead.
Chicken Breast - Slice your chicken thinly for this recipe.
Bell Peppers - I use four different colors of peppers for interest. Red, green, yellow, and orange create a rainbow of peppers.

HOW TO MAKE INSTANT POT CHICKEN FAJITAS
- In a medium mixing bowl, add the oil, lime juice, spices, salt, and pepper.
- Whisk to combine.
- Add thinly sliced chicken.
- Toss to coat.
- Add the chicken broth and then the chicken strips to the stainless-steel insert in the Instant Pot.
- Layer the bell pepper and onion slices on top of the chicken.
- Cook in the Instant Pot as directed in the recipe.
- After releasing the pressure, stir to combine and serve on tortillas with your favorite toppings.

HOW LONG DO FAJITAS TAKE IN THE INSTANT POT?
Because we've cut the chicken into thin strips, it only takes about 7 minutes for tender chicken and peppers to cook in the instant pot. pressure cooking any longer than that will overcook your vegetables.
WHAT TO SERVE WITH INSTANT POT FAJITAS?
When making fajitas, the chicken, peppers, and onion filling is only part of the deliciousness.
You'll want to make sure you have delicious toppings to serve with your chicken fajitas. Here are some excellent suggestions. Use what you like.
- Soft, gluten free flour tortillas or corn tortillas.
- Diced tomatoes
- Diced fresh jalapenos
- Lime wedges for squeezing.
- Shredded lettuce or cabbage for crunch
- Guacamole
- Sour cream
- Shredded cheese
- Hot sauce or Salsa
CAN I MAKE INSTANT POT FAJITAS AHEAD OF TIME?
This is a great recipe to prep ahead of time so that when it's dinner time you can just toss everything in the instant pot.
Mix up your spices and place in a baggie or air tight container.
Slice your chicken and refrigerate.
Slice your peppers and onions and refrigerate.
When you're ready to cook, pull out the pre-prepped ingredients and add to the Instant pot as directed in the recipe.

Instant Pot Fajitas

Ingredients
- 3 tablespoons olive oil
- lime juice from 1 lime (about 2 tablespoons)
- ½ teaspoon ground cumin
- ¼ teaspoon chili pepper
- ¼ teaspoon ground paprika
- ¼ teaspoon cayenne
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1 and ½ lbs. chicken breast (about 3-4 chicken breasts), thinly sliced
- ¼ cup chicken broth (or water)
- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
- 1 orange bell pepper, cored and sliced
- 1 medium onion (white or yellow), thinly sliced
Instructions
- In a medium mixing bowl, whisk together the oil, lime juice, spices, salt, and pepper.
- Add thinly sliced chicken and toss to coat.
- Add the chicken broth and then the chicken strips to the stainless-steel insert in the Instant Pot.
- Layer the bell pepper and onion slices on top of the chicken.
- Close the lid, lock it into place, set the valve to "sealing" position and press the "manual" button.
- Set the timer to 5 minutes and press “start”.
- When the cook time is complete, press the "cancel/off" button.
- Carefully switch the valve to venting position and press the quick release. When the pressure is released, and the metal valve drops, carefully open the lid. Be careful as steam will erupt from the instant pot.
- Serve these instant pot chicken fajitas on tortillas with your favorite toppings.
Notes
- You can use water instead of chicken broth. Don’t leave this out. The IP needs the liquid to help bring everything to pressure and it will help prevent burning.
- If you like your fajitas on the crispy side, spread the chicken fajita mixture on a baking sheet and broil it for 4-6 minutes.
