If you soak your potato slices, you will draw all the starch into that soaking water. So, please avoid soaking your potatoes. It does more harm than good.

Gluten-Free Scalloped Potatoes are the ultimate cheesy comfort food. Rich, creamy, savory, and filling, this casserole-style side dish is a total crowd-pleaser.
Ingredients
- 4 tablespoons butter
- 1 small onion, peeled and thinly sliced
- 3 large garlic cloves, minced
- ¼ cup all-purpose gluten free flour
- 1 cup chicken broth (or vegetable broth)
- 2 cups milk (2% or whole milk work best)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 4 pounds Yukon Gold Potatoes, sliced into ⅛-inch round slices
- 2 cups shredded cheddar cheese or white cheddar cheese, divided (fresh grated works best)
Instructions
- Heat oven to 400°F. Grease a 9 x 13-inch baking dish; set it aside.
- Melt butter in a large sauté pan over medium-high heat. Add sliced onion and sauté for 5-6 minutes or until soft and translucent.
- Add garlic and sauté for an additional 1-2 minutes.
- Stir in the flour and cook for 1 more minute.
- Slowly pour the broth into the pan, whisking as you pour it in.
- Add in the milk, salt, pepper, and onion powder and whisk until combined.
- Continue to cook for 1-2 minutes, just until it starts to simmer then remove the pan from heat; set aside.
- Spread half of the sliced potatoes in an even layer on the bottom of the pan.
- Top evenly with half of the cream sauce.
- Sprinkle 1 cup of the shredded cheese over the top.
- Add the second layer of sliced potatoes and the other half of the cream sauce, and then the remaining 1 cup of cheese.
- Cover the pan with aluminum foil and bake for 50-60 minutes, removing the foil half way through.
- Remove from the oven and cool before serving.
- Serve warm.
Notes
- There is no need to peel your potatoes for this dish. Just wash them well and cut off any spots.
