Gluten-Free Chicken Pot Pie
Gluten-Free Chicken Pot Pie is one of those meals that comforts you on a rainy day. It's perfect when you are looking for a warm, savory dish during the winter months, and it really hits home when you are having a rough day.
Gluten-Free Pot Pie is my husbands number one favorite meal. Every time we get a rotisserie chicken, he asks me to get another one and make him a couple batches of pot pies. He usually eats one or two, then we freeze the rest.
A lot of people stay away from gluten-free pot pies because of how time consuming it is. This recipe for Gluten-Free Chicken Pot Pie is broken down into it's simplest form. If you need an even simpler recipe, you might want to consider buying a crust mix, or a ready-made gluten-free pie crust.
Gluten-Free Chicken Pot Pie is perfect for lunches, or heating up after a long day. It's one of those meals that's good all year round, and will warm you from the inside out.
A couple years ago we visited my sister for Thanksgiving and she had purchased a smoked Turkey. Have you ever had smoked Turkey? It's not for everyone, but we think it's pretty amazing. I am working on creating a one-crust version of this gluten-free chicken pot pie and I'll update this post and link to it when it's up on the blog. These little pot pies were made with a mini-pie pan. When I'm not feeling up to cutting out mini-pie crusts, I make one large gluten-free pot pie, using a 10" pie pan. You can make either, just make sure to adjust your cooking time.
Can I freeze gluten-free chicken pot pie?
Yes. I usually bake it first then freeze it, but because all the ingredients are already cooked you can freeze it before you bake it. Just note that the crust may be a little softer if you bake it before you cook it.

Is Chicken Gluten-Free?
Believe it or not, I get this question often. For the most part, yes, chicken is gluten-free. Sometimes during processing fillers are added to the chicken to add flavor. Sometimes those filler are not gluten free. Always check labels if you are buying chicken at the store.

The exact pan that I used to make these mini pies isn't available anymore but Cobble Creek makes a silicone mini-pie pan set.
Can I make one large gluten-free chicken pot pie, instead of small ones?
Yes. Divide dough in half and roll each ball of dough out on a gluten-free floured surface with a rolling pin until approximately 10-inches in diameter. Alternatively, roll dough between two pieces of wax paper. Bake for 30-35 minutes or until the crust is brown and flaky on top.
Gluten-Free Chicken Broth
Not all chicken broths are gluten-free. While chicken is gluten-free in it's natural form, sometimes glutinous ingredients are added to chicken broth for color and flavor. Always check labels on gluten-free chicken broth before purchasing.

Gluten-Free Chicken Pot Pie
A delicious Gluten-Free Chicken Pot Pie made from scratch using chicken, carrots, onion, peas and a creamy, smooth gravy like sauce.
Ingredients
For the crust (Makes two 10" crusts, enough for one large pot pie, or 6 small pot pies) :
- 3 cups all-purpose gluten-free flour blend
- ½ teaspoon salt (omit if using salted butter)
- 2 teaspoons xanthan gum (omit if you use a blend that has xanthan)
- 1 cup butter (2 sticks), cold - cut into small pieces
- 8-10 tablespoons milk, cold
For the filling:
- 1 pound skinless, boneless chicken breast halves - cubed
- 1 cup sliced carrots
- 1 cup frozen green peas
- ⅓ cup butter
- ⅓ cup chopped fresh yellow or white onion
- ⅓ cup all purpose gluten-free flour blend (or 3 tablespoons corn starch)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 ¾ cups chicken broth
- ⅔ cup milk
Instructions
- For the crust- Preheat oven to 425°F (220°C). In a medium mixing bowl, combine flour,salt, and xanthan gum.
- With a pastry knife (or a knife and fork), cut butter into flour until butter is the size of small peas.
- Add milk and combine. Add additional milk if needed. You may need to use your hands to work the milk into the dough.
- Dough should be moist and easy to roll.
- Divide dough in half and roll each ball of dough out on a gluten-free floured surface with a rolling pin until approximately 10-inches in diameter. Alternatively, roll dough between two pieces of wax paper.
- Place one circle of dough into the pie pan and trim edges if necessary.
- For the filling- In a medium saucepan, combine chicken, carrots and peas. Add water to cover and boil for 15 minutes. Remove from the pan and drain; set aside. If you are using precooked chicken, cook the peas and carrots, then add in the cooked chicken after draining.
- In the same saucepan over medium heat, cook onions in butter until soft and translucent.
- Stir in flour, salt and pepper. Slowly stir in chicken broth and milk.
- Simmer over medium-low heat until thick. Remove from heat and set aside.
- Place the chicken and veggie mixture in bottom pie crust, filing about half way. Pour the gravy mixture over the top and fill about ¾ of the way.
- Cover with top crust, seal edges, and cut away excess dough. Cut small slits in the top to allow steam to escape.
- Bake for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly.
- Cool for 15 minutes before serving.
Notes
When working with or measuring gluten-free flour, spoon the flour into the measuring cup and level. Do not scoop your measuring cup into the gluten-free flour. The best method really is to weight it but I don't have the ingredient weights for all my recipes yet.

This was amazing! Especially for gluten free. My mom has celiac and she was so excited to have it. There were only 2 problems, one the chicken, carrots, and peas were kinda bland. Even with the gravy. Also I have no idea how this was supposed to take you and hour and a half. I made 12 mini pies and it took 5 hours, to mold the crust. So next time I will try seasoning the filling not and will use cup for cup’s pie crust. But besides the crust everything was easy to make, even for me. (I’m 12)

My husband is a celiac and misses dishes like chicken pot pie. This recipe was delicious and you'd never know it was GF! The crust was perfect. I left it a bit dry, rolled it out between sheets of waxed paper, and easily transferred it to pie dish. I would add more seasoning to it because it was a bit bland. Maybe some poultry seasoning and more salt. Will make this again and again. Thank you for sharing the recipe!

I really loved this dish (especially the gravy recipe!), but I struggled with the crust. It came out not at all like your picture- mine was quite dense and partly undercooked, even though I cooked for the recommended time. Even the fully cooked parts were crumbly and tasted off-putting. I suspect user error and/or that I used the wrong kind of GF flour. I had problems rolling it out, as it kept cracking, which is why I think it came out a bit thick. I used Cup4Cup GF flour, which contains Xanthan Gum. I will try your recipe for GF flour next time, but just wondering whether anyone had success using a store bought flour.

I love this recipe! I make it as a single crust, family-size pot pie with whatever veggies we have around the pantry. I usually throw in a few herbs to season it up a bit more (thyme and garlic...we are garlic-holics in this house). It's always delicious. I'm getting ready to bake pies for the holidays, and am wondering if this crust would work for pumpkin pies. We usually use the leftover crust from pot pies to make pie crust cut out "cookies" with cinnamon and sugar on top. It's such a yummy crust, and by far the easiest GF one I've found. Any tips?

I added seasoning to the crust...it was too bland without it. I too took 5 hours! Next time I will make the inside and make the crust afterward. That way my crust doesn’t dry out. I also seasoned the filling using raw garlic, sage and I added mushrooms to the filling. It was tasty! However my hubby popped the top crust off and ate the inside and bottom crust!!

This is a superbly delicious recipe. I followed the directions aside from using almond milk in place of dairy.

This sounds amazing. You say in your dialog that you are working on a one crust version. How much fifteenth would it need to be? Can't you just do the same thing without the bottom crust? I love pot pie but the double crust is more than I would like to consume.

You can cut the recipe for the crust in half and just roll it over the top. I also have a chicken and biscuits recipe that is the same pot pie filling with biscuits on top - it's super easy to make.

I would like to make a suggestion regarding cooking the vegetables in water. Don't discard the water after cooking. Instead, use that water as part of the chicken broth amount so you're not discarding all those wonderful vegetable nutrients. Simply add a little Not Bullion (chicken flavored) to avoid watering down the overall flavors. I would also add a little paprika and/or rosemary as my husband and I thought the recipe was lacking a little in flavor.
I will definitely make this recipe again with a little more seasonings.

Hi there! Thank you for this recipe, CPP is my favorite food but haven't made it since being GF. Unfortunately, I don't have any Xanthan gum and neither does my local grocer. What can I use instead? I have egg whites, flaxseeds, and chia seeds- I have heard these may work as a replacement but I am not sure what the ratio would be. Thanks so much!

Which flour blend do you have? You can also try psyllium husk powder or guar gum. For psyllium husk powder, you would use 3x's what you would the xanthan gum.

You can bake them for less time if you do smaller ones. Just watch them for doneness. I like to make smaller ones and bake them, and then freeze them. We reheat them in the oven or the microwave.

Hello there,
I am eager to try this recipe but need to clarify something with you. I have bought a GF frozen pie crust (just 1) and am wondering should I bake the crust per package instructions ahead of time or....bake it once I have filled it with all the yummy ingredients. Is it absolutely essential that I have a top crust for this recipe or will just the bottom crust do the trick? I have never worked with a GF frozen crust before so appreciate your guidance very much.

You can add the filling and then bake it per the package instructions. You don't have to top the filling with a second crust if you don't have one.

You can add potatoes. Lot's of my readers do. I would boil them for a few minutes until they start to soften, then add them.

I was very nervous about making the crust after reading a few people say it took them several hours... and I've never made any kind of crust before. I decided to leave my butter on the counter in a covered dish overnight (I have air conditioning on so it didn't melt) and it made it the perfect consistency for the dough. Ended up taking me only 30 minutes to make one large ball of dough. Followed the recipe exactly and it was delish! Only thing I'd do differently is add some thyme (I just didn't have any on hand). I've never made pie from scratch before, and I really thought it was harder. This recipe worked really well! It came out crispy, but not too crispy and beautifully golden brown. Just make sure your filling is a little runny, because the crust absorbs a bit of the moisture. If you're looking for a tasty gluten free pie crust, this one is definitely a must.

Yes, 6-12 mini pot pies depending on what you're using or one large pot pie. For large muffin tins, you can use a bowl inverted, and cut around it. A large biscuit cutter or a wide mouth jar would also work.

This is a great recipe! I used different seasonings for the gravy, and the ratios of ingredients for the filling mix were perfect for my 8 inch spring form pan. For me, the crust was the absolute star. It came together really fast. I used Bobs Red Mill 1:1 baking flour blend and it was perfect. I chilled it in the fridge while I made the filling to keep the butter from melting. the crust was Golden and flaky, even on the bottom, and stood up beautifully once I removed the sides of the pan. I can’t wait to try this with other fillings- savoury and sweet! Thank you for the recipe!

This was amazing. I cut my butter into cubes and stuck it in the freezer while I made the filling. I totally cheated and used GF cans of cream of chicken and used a rotisserie chicken and frozen vegetables. It was awesome! Made two pies a d froze one of them! Yum!!
